Just in case he hasn't looked it up Nashville Hot chicken is coated in oil. All of those seasonings are mixed in hot oil and drenched over the chicken. That's why it's usually a sandwich or served with Pickles and coleslaw.
it means they screwed up when deep frying it , the oil temp was not hot enough , usually this happens when you crowd the vessel you are frying in , i assume then they might not have a proper fryer because this should not happen with a commercial fryer that holds the temp steady always , this is more likely to happen for home cooks who fry in a skillet or something .

I dont really want a thick layer of dry crunchy bread then wet, waterlogged meat in the middle. It's too much of an extreme, even though those were the traits we originally asked for. I kinda miss the thin layer of salty skin you used to get.
