    I really enjoyed your video. So true your philosophy. One of my favorite knives in my arsenal is a little paring knife from the "Dollar Store"... they come in packs of three, its blade is 2.5 inches long, with cheap black ABS plastic scales, and the thin blade really flexes; I'm somehow always grabbing one of them to prep/process veggies, fruit, or berries... it somehow just works for me!

      Totally. I’ve had a lot of grumpy people at me for expressing that. I think people buy into whatever they do is best, especially when they’ve spent a lot of money on it, when really there are other good simple options. (And cheaper)! But thank you and thank you for the support!

    I need a good knife for trimming briskets. Most of us Texas folks use a boning knife. Some use a filet knife. Please recommend.
    Also, Which of them was the ken fuyuki knife. I’ve heard complaints about soft blades on the Colinas. Thanks a ton!!,

      Hey thanks so much for saying hi! I love it when people ask questions! I’m pretty sure the Serbian knife is. I bought these quite a while ago. But I have absolutely no issues with them at all. Funnily enough I was trimming briskets today at work and only had my global knife on me. That boning knife would have been absolutely perfect though. I highly reccomend it! It’s the one on the left. I think a filet knife would be a bit too flexible. That one in the pic is solid but has that curved blade and sharp point for getting into tight corners.

    If you had to pick between the serbian chefs knife and the chinese knife (not the butcher knife). Which one would you say is your favourite?

      That’s a tough one! I love them both. But probably the Serbian knife.

    For those kitchen knife thief’s fix that by etching your name in it with a car battery charger and vinegar salt water. Very easy. Decal company’s can cut your name on vinyl stickers for a few dollars and you get a bunch.

      Don’t do that regularly anymore but wish I’d know that then! Although I suspect some of the thefts shamelessly came from People’s last days or
      Temporary staff.

      Eat The World for sure. It is an easy way to logo, customize anything steel for gifts and such too. I etched logos and initials into hunting knives i made for friends.they were high carbon steel so before i removed the sticker i brushed on some gun blue into the etch to make it dark black and pop.

    Sound alot like Louis Rossman. I love it. And agree about mismatched knives. Have some stainless from dollar store that I'm not afraid if they walk away at work.

    handmade are easy to handle and they do not chip off easy, they are very easy to get an edge though they loose an edge quick but you can just use a flat stone to get the edge back in a jiffy. I love handmade.

    I've got a 10 inch Wusthof Classic as well. The bolster on it is really irritating and makes it hard to sharpen. Aside from that, it's a great knife. I prefer my cheaper Jap santoku -- which is a Kai copy of your Global. Your three Chineseum knives are all shitters though. 60 Rockwell my arse! I hope the companies paid you well. If people really must have them, I'd suggest they buy them on AliExpress for about a quarter of what you say you paid for them.
    Personally, I wouldn't touch 'em with a barge pole.
