There is nothing wrong with fighting on the back foot in Muay Thai. That is part of the beauty of the sport, seeing beautiful defense. I think it is detrimental to the sport when the announcers always talk about fighting on the back foot as a negative thing and when the ref always warns the fighter to go forward.

I find that the judge scoring criteria does not encourage entertaining fight - they tend to favor those who fight on the back foot and throw round house kick - even when the kick was blocked. A better way to encourage more entertaining fights is to score high on damage. That's way you'll have more entertaining match.
