Fogo at Home: Candied Black Pepper Bacon

  • There’s nothing better than the smell of bacon, especially Fogo candied black pepper bacon. Chef Antonio is showing us how to make the beloved Fogo Bacon in the comfort of your own kitchen. Preheat your oven and get ready to enjoy this sweet and spicy treat with your family and friends.
    Recipe:
    Ingredients:
    · 1 pound bacon
    · ½ cup granulated brown sugar
    · 1 teaspoon red pepper flakes
    · 2 tablespoons pepper
    Directions:
    · Preheat the oven to 350 degrees.
    · Line a baking sheet and grill tray with the bacon close together, not overlapping.
    · Combine the brown sugar, red pepper flakes and pepper in a bowl and sprinkle the entire bowl evenly over the bacon.
    · Place the bacon in the oven for 5 minutes, then turn the baking sheet around and return to the over for another 5 minutes (10 minutes total).
    · Remove the bacon from the oven and let cool for 15-20 minutes before serving. Enjoy!

    This looks fantastic. This is one of our favorites when we go to Fogo.
    Also, if the chef thing does not work out, I think this guy could be a Bond villain.

    Had this at Fogo last night with my fiancé. We both said it was the best bacon we’ve ever had lol. Going to try this soon!

    Had this at Fogo last week and glad I found this. However, 350F for 10 minutes is not long enough. The bacon isn't fully cooked. In fact, I can't find another recipe on line where they cook at 350F for < 20 minutes.

      I just made this recipe and set my oven for 350F on CONVECTION ROAST for 5 minutes, turned the pan, then another 5 minutes. It was fully cooked. I used regular bacon, not thick cut.

      I’m currently making this and I had to come look at the comments because my bacon is not fully cooked. I’m using the thick cut. Cooking for another 5 and going from there.

      He mentions having a roast function for his oven which explains the robust sizzling after 5 minutes, but for those of us with a conventional oven definitely going to take at least 20 minutes on an upper rack closer to the heating element

    So glad I found this. Question, recently my Fogo de Chao has added some AMAZING white cheddar grilled cheese squares with some spicy honey. What is the recipe for that??

    My son showed and sent me this video , so ofc gotta try it
    But..... issue with the 5min on each side it was not done... figured out that bake and roast are different Temps
    Its a work in progress to get it right lololol

    It would probably work to use a shaker to apply the seasoning mix easier.

    Took longer for me, about 20mins. Might be faster it if the bacon is at room temperature or a convection oven is used. I'm not sure what roast mode is, my oven does not have that.

    Does it matter if it’s thick cut or not? And do we only put the seasonings on one side?

      I had best results with thin cut.

      I was thinking the same thing but then I realized my upper oven actually has 3 settings (bake, broil, and roast). I've NEVER used the roast setting... probably because I've never seen another recipe that says to use the roast setting 🤷

      Broil would be 500 degrees not 350.

    Too much pepper! With this recipe it does not taste like the restaurant. Half the pepper at least to start.

      I cut the black pepper in half too. Also I cook it much longer. Thin cut about 16-20 min. Thick cut about 30-35 min

    Ok... I made this and it was amazing, but WAY too spicy. I think I'll try it again with 1/2 to 1/4 of the black pepper. It came out black and angry looking lol I like spicy, but my family does not. :)
