    I recently started making sourdough bread from Einkorn - using the Jovial book - the artisan recipe. I love it! No spike in blood sugar, no brain fog, feel full and satisfied, wonderful taste. Einkorn flour is amazing!

      brain fog is mostly owed to too much sexual stimulation..

    Einkorn sourdough foods has healed my imbalance in my gut. Have had this chronic diarrhea for over a year, and now it's gone 😊😊

    Love your knowledge!!!
    I can not tell you how excited I was to eat bread this weekend.
    We went camping and I have been doing so well on the kefir, cultured veggies and kombucha that I decided to try bread again!
    I took 5 cups einkorn flour, chopped 2 sticks Keri gold butter, two eggs, two tablespoons of sugar, 5 teaspoons baking powder, 2 teaspoons of salt and then 1 and 1/2 cups of kefir. Blended by hand into a dough ball and let it sit over night.
    Got up and baked them in muffin tins at 400 for 15 mins.
    They were delicious and I didn't experience the stuffy nose, digestion issues and whole body inflammation that I would normally have after eating bread!
    I am definitely going to do the sourdough starter next.
    You are just such an awesome woman! Thank you for what you do and may you and your family be blessed with so much abundance and joy❤️

    My first loaf turned out like hockey puck 😢
    I broke it up with a hammer and knife and ate it with warm milk and honey for breakfast and it was the best hot cereal ever !!!!! ❤

    Jovial einkorn has me HOOKED :) I love it so much and am now spoiled even with milling my own other grains as well, this one just has the flavor and texture that is #1 for me.

    Also....I am a licensed veterinarian technician and groomer with over 20 years experience. I am trying to encourage my clients to start using kefir for thier pets but people are so leary of dairy🤷‍♀️
    I will keep trying though because many of our pets are now suffering from man made illnesses due to heavily processed foods and over use of antibiotics, etc etc!
    Here's to healing for us and our four legged friends 🐶❤️

      It has helped our dogs and our friends dogs so much. You only need a small amount for most pets. But it's ok not everyone is ready to learn about these powerful foods yet!

    I love that you made this audio. I wish more understood how incredible this flour is and why it is so much better for our bodies. I have been making Kefir Einkorn, and love it. But, everything baked with Einkorn is just better.

    I am making a sandwich loaf tonight ! I used a sourdough starter I made with einkorn flour a month ago and the last loaf I made was AWSOME ! It is rising overnight and I will bake tomorrow morning 😊

    How Einkorn was re-discovered; Einkorn was cultivated through the Bronze Age and then diminished over time. Archeologists discovered near-living proof of einkorn when two hikers came across a body protruding from a melting glacier in the Italian Alps in 1991. This body was unveiled to be that of Ötzi the Iceman, named after the region where he was found, preserved in ice for over 5,000 years. His last meal was preserved, examined and found to include Ibex meat, roots, berries and einkorn wheat.

      I do a weekly podcast, so thats what this weeks is about. Filming videos is great but can be costly and time consuming. I do have many videos and instructions on my website though.

    Thanks Donna, I love making eikorn bread , iam switching grom hybridized wheat. I love the taste and I feel more healthy. What are your thoughts from the kefir from the stores?

    Einkorn is amazing and all I eat, with the occasional homemade wood fired pizza with Italian 00 flour. Besides the fact regular wheat is full of GMOs, most of it is bromated and that messes with a lot of people. My son is super reactive to bromates and doesn't feel good with modern flour and thrives on Einkorn. Plus it tastes amazing once your palate adjusts.
    I make my own homemade sourdough einkorn bread, it is a source of nutrition and great enjoyment. Makes great pastries too. Pizza crust is very sturdy and fairly crisp, travels better than regular crust

    I just ordered 20 pounds of einkorn flour from the suggested website and I can't wait to get started. I did find on your website what to do with the starter so I can use it with this flower. Are you going to post more recipes on your site the uses with this flour? You mentioned cookies etc. I would like to do more then just bread although I love love love sourdough bread using your starter! ;)

    I need to order some. Where I live einkorn is not sold in the store. I use buckwheat when I don't have einkorn because I saw a documentary on Mt Vesuvious where they found a bakery in pompai full of buckwheat sourdough bread that was preserved by the ash.

    Is it whole wheat bread you usually eat?

      Mostly sourdough bread. Either Eikorn Sourdough or Regular sourdough that i make using a white wheat.

    Have a question please, if we wanna compare einkorn to other grains like backweat, oats and quinoa, which one would be the best. Coz i used to make these grains as bread and recently started to ferment the oats before turning it into bread.
    What is your point of view? Regards 🌹

      Hi Amani, They all have different benefits, I only make sourdough bread with regular wheat flour or with einkorn flour personally. The sourdough breaks down the grains and makes them more digestible.

    I'm quite doubtful those of us with either celiac, Crohn's, IBD can safely consume this!

      Some need to heal their gut/body before adding in bread to their diet. Even if it is sourdough. If you have a severe illness/imbalance then you'll need to heal with a stricter diet first. Cultured Foods are great for this!

      I supposedly have "celiac" disease and cannot eat wheat in the USA without painful side effects. However, I can eat all the bread I want in Europe, where they commonly use einkhorn and no preservatives.

    I am confused and I want to make sure I am caring for my sourdough starter correctly, although they are thriving fine. I was sent through email this link from your staff how to care for the starter drive.google.com/file/d/1vNlOHeYGa3R-SKeN2c_uui2YT2E6Vcev/view but your online website/store culturedfoodlife.com and it states the ratio of 1:1:1, but what I was sent states 1:2:2, may I get clarification which is correct? I would be grateful! I love your work! I love what you do for us! P.S. I am asking for both when in use and when stored in the fridge and I understand feed the stored starter once a week.

    Einkorn being most ancient is just pure fictive and assumed "fact" ..
    when somebody says something like never been hybridized is just beyond me.. I believe einkorn is just result of growing wheat in poorer conditions just like barely or rye which also may be the "original" wheat .. so nobody knows... is just advertizment ..
