How to Make Farm Fresh White American Cheese

- Welcome back to the homestead. Today we are gonna make some delicious, creamy cheese from scratch. You won't believe how quick and easy this recipe is! It is also very budget friendly. The cost of the ingredients to make this come in much lower than the super processed cheeses that it replaces. This recipe works to replace both white American and Velveeta cheese in any recipe. We hope that you give it a try!
Recipe
Ingredients:
1 gallon milk
3 teaspoons citric acid dissolved in 1/4 cup water
3/4 teaspoon baking soda
1 1/2 teaspoon salt
1 Tablespoon butter
4 Tablespoons cheddar cheese powder
1/4 cup milk
Instructions:
Heat milk to 140 degrees
Remove from heat
Add citric acid
Stir gently until separated
Drain off the whey
Put through a cheese cloth
Let set to rest for 10 minutes
Add the rest of the ingredients to these curds
Heat together until all lumps are dissolved
Line a bread pan with plastic wrap
Pour in melted cheese
Cool in fridge
Enjoy in your favorite cheese recipes!

I love this ♥ Would this recipe work to make goat cheese as well or is it made differently?
The recipe I have just called for 1 gallon of milk. The only thing that I wonder about is the difference in fat content. Goat milk doesn’t have as much fat. If I had a good, affordable source of goat milk I would give it a try. I will probably try it this next spring after the goats kid, when we are back in milk. 😊
Is this milk straight from the cow or can "whole milk" be used?
This milk is straight from the cow. But, you can absolutely use whole milk from the store 😊. Give it a try with store bought whole milk! Thank you for stopping by and commenting!
@@Thehomesteadinghills I don't know where else you can buy it but Whole Foods by me sells low heat pasteurized non-homogenous milk. I take it that would be a great substitute from farm fresh, and am assuming which is non pasteurized non homogenized milk. I do have a farm a little over an hour away to get farm fresh raw milk. But am afraid how long I can have it unrefrigerated for.
Could you use lemon juice in place of the citric acid powder? Most people don't have that on hand.
You can substitute lemon juice or white vinegar for the citric acid. It might impart a slightly different flavor, but should work. Thank you so much for watching and taking the time to comment.
