I bought a typical huge Costco box of Cremini mushrooms, cleaned them, sliced them in my food processor and packaged them in one cup measures and froze them raw. I was afraid they might turn out rubbery but they didn't. I made Swedish Meatballs and added one of the packages and they imparted a really nice mushroom flavor. It was a success so now that is how I'm going to preserve them from now on.

Love your informative videos. Glad you are focusing on us "freezer-condo-dwelling-people" in your preservation classroom. Just have to laugh at the snowflakes commenting on not washing your hands. Growing up in post-war Europe, I likely ate more dirt as a kid than today's goats. Now, 81 and going strong without any medication!
What is a snowflake- someone that says "you don't watch your hands?" I agree people shouldnt accuse Pam of not washing her hands and you shouldnt name call. really

I buy sliced mushrooms at my local Aldi, which isn't very far from me. I dehydrate them and turn them into mushroom powder to add to meat loaves and other meals. We don't like mushrooms, so this is a way to get them into our diet. I've done this for many years. I just made a fresh batch of powdered mushrooms recently.
At the Costco Business Center they sell a 2.5 lb box of already sliced mushrooms for cheaper than buying them unsliced from the regular grocery store. Those are now the only mushrooms I buy. I'm 67. To paraphrase, "Ain't nobody got time for slicing mushrooms!"

Yes but what else do they put on the mushrooms for freezing? When you do it yourself then you know what method you’ve used & how you did it etc; with the already frozen ones hiw do you know?? I’d rather pay a bit more & take the time to do my own, thanks 😮😊

I just picked up a pre-sliced pack at chef’s store in my area (used to be cash and carry) and didn’t get them right in the pan and two days later they were slimy!!
But I knew better, I’m definitely gonna try this method in lieu of canning!

Ma’am, thank you for the tips and just ignore the negative comments people make about handwashing. You are in your home cooking for your family. I’m sure no one has died or any kind of poisoning over the years from your cooking. People are too focused on things they don’t need to be focused on.we wash our hands like crazy in the kitchen and just because they don’t see it doesn’t mean it’s not happening.
Can your mushrooms they are yummy and you don't have to worry about your power going out..

Hello Pam and Jim!! I have a question.... When you freeze dried the lemons....How long did you keep them in the freeze drier?? I am trying this...however every time they don't get dry..they are still sticky!! Do you have any ideas on how to do them better? I have trashed plenty and I thought you might know something that I am doing wrong?? You have helped me in so many ways! I am canning and dehydrating and freeze drying...I love knowing that I am making food for our family!
Your lemons are very high sugar, which is what’s staying sticky. Try just one sliced very thin when you do a load of something else (as a test) and see if that helps. Second option would be to do a quick rinse of your slices before freezing them, but you’ll lose some flavor.
I have FD'd many lemons, limes, and oranges. When the FD ends, don't shut down the machine, open the valve (slowly) remove a tray, turn the citrus over, weigh the tray in grams & put it back in the machine. Do this with each tray, writing down the weight of each tray. The machine should ask if you want to add more dry time. Set it for another 2 hours. After 2 hours, repeat this process. If the trays have not lost any weight, your product is dry and ready to package. Keep repeating this until there is no weight loss. A couple of things to note, slice the citrus relatively thin and the second thing is to make sure there are no seeds in your citrus. Good luck.

My goodness! You are so careful about everything that I cannot imagine how anyone would think you do not wash your hands. I wash mine so much that I have to put lotion on them several times a day. I really enjoyed this video. We love mushrooms and I have dehydrated lots of them and they are just okay rehydrated during cooking. Definitely not like fresh cooked, but not too awful. When I can get mushrooms on offer I grate them in the food processor, bag them and freeze. Then I use them to make mushroom soup. You can't tell the difference from fresh.

@@lindahansen9395 Pam has a great one - Hungarian Mushroom Soup. Just search in the channel. I’ve made it from fresh as well as from dried. So, so good
2 boxes of mushrooms grated , 1 large onion fine chopped. Half a bunch of parsley fine chopped. 2 large potatoes fine chopped, a decent sprig of fresh thyme, 1 large garlic clove fine grated. 2 sticks of celery grated. Sweat it all in butter. Add veg stock. Pressure cook 20 minutes. Remove the sprig of thyme and puree. UK boxes of mushrooms, I think about 300g? Can do half stock and half milk.
What is very, very important - when using the frozen mushrooms, they must be dropped directly in hot oil, boiled or how you cook them. Never defrost them before cooking, a specific deterioration of their protein is happening, which can lead to food poisoning. Defrosting makes them mushy, anyway.
I always take mushrooms out of container and either wrap in paper towels or a small paper bag. Something breathable and that absorbs moisture. They'll last longer till you can use them.

Already fast frozen mushrooms are usually much cheaper than fresh ones (I sometimes buy 2 Kg bags). Why would you go through all that instead of buying them pre frozen?
I've never seen sliced frozen mushrooms in any of the grocery stores near me.

In Canada COSTCO used to have them.
Now, for certain dishes like stroganoff I prefer the preserved one (in jars), plus it lasts longer and doesn't require freezer space. I like the frozen mushroom to make things like risotto that benefit from a more earthy flavor.

I freeze a lot of things this way! I can my spaghetti sauce, but freeze the cooked sausages and meatballs on parchment lined baking sheets. They can all be frozen in one bag, which I did before I had a food saver. Now I seal them in portions that my family generally uses for each meal. When I buy ground beef in bulk, I brown it and divide it into bags; one bag for each pound of meat I started with. This is a great shortcut for tacos or to whip up a quick meat sauce, or whatever other recipe that calls for browned ground beef. If you flatten the bags, it defrosts in no time. 😉
Current thinking is to initially cook mushrooms in water then add less fat (butter, bacon grease, etc.) at the end to brown them up. According to Alton Brown, fat doesn't actually "cook" them. Only water can do that. And until they're cooked they act like sponges for any fat you add. Doing it in this order means you can use less fat. I cook them at least weekly, for homemade pizza, and I'm a convert to this method.

I love mushrooms! and I have forgotten them in the fridge, but I have learned to trick this problem, when you buy the mushrooms, take them from the plastic container and put them into a paper lunch sack, the regular brown ones, and put them in the fridge, if you forget they are there, they will dehydrate in the bag in the fridge, that is in the frost free refrigerators. If you have to "wash" your mushrooms which is ok, don't let them soak up a lot of water, but you can lay them out on a terry towel to dry off, then when they are dry you can put them in the paper bag too. but at this point, I just chop them up and season them with a little salt and onion powder and freeze them in cups in sandwich bags.

Aldi had mushrooms on sale this week so I bought a lot. I wash them and use my salad spinner to remove the water. Works like a charm. Then I dehydrate them for power. I think they are rubbery rehydrated so I powder them. I am going to try cooking and freezing them. I LOVE mushrooms and this seems like a good way to have simi fresh ones! I use square bottom gift bags to help group like things together in the freezer.

My question is, can I freeze store canned mushrooms? The cans are pulled top cans, not a fan. I don't trust cans for longer shelf storage, possibly leaking.

I've tried this and they still turn out rubbery. If you chop them finely, it's not as noticeable. For slices, i like to use an egg slicer.
But not one with metal strings! I finally found one with blades. Great for slicing strawberries, too

I love mushrooms too! I buy the large commercial size can of sliced pieces and stems and measure them into small snack size baggies and freeze them this way. I store all those little bags in one large gallon size bag. Simply pull out and defrost. I love your method too! I love your videos and want to thank you and Jim for all that you do to help and inspire me and others. ❤️

You can also sauté them and put them in plastic bags by the amount you normally use. We’ve done it for years.

Get yourself a mushroom slicer. Sometime called egg slicer, for hard boiled eggs. Wirks great slucing strawberries for dehydrating or mushroom for dehydrating.

Rose, darling. You need to start cutting back on sugar and carbohydrates to protect your liver and kidneys. Unfortunately, you have visible signs of metabolic illness. I recommend that you check out the keto diet and intermittent fasting. I see signs in your face that indicate ill health. I want you to continue with your amazing films and I want to continue sharing all your great knowledge, for many years to come.

Out of all my food storage, my freezer is my hardest to organize. Because things just get thrown on top of each other. And when something is heavy, like ice or a frozen stew it’s very difficult to mix with that things like bread or vegetables. So it’s a real problem trying to organize the freezer. Every time you have to get some thing out, you have to drag everything out of it. I’m talking about a deep freezer here. Which doesn’t thaw and freeze it make your food stale it stays in a nice deep freeze. But it’s very inconvenient at the same time.
Pam: That is crazy that someone would accuse you of not washing your hands. Boy that person better not ever eat out at a restaurant. I have watched many videos where you meticulously sanitize your surfaces. Like one of the other commenters I too would like to see a video on raising your own mushrooms. I agree with the perishability of mushrooms. I like mushrooms on my pizza and my family likes to eat them as side dish with both pork and beef. What I do not like are the fresh mushrooms on my pizza that local pizzerias use that do not get cooked due to the short time that those pizza are cooked in commercial ovens. I have frozen mushrooms on several occasions with limited success so I was glad to watch your video so I can improve the quality of the mushrooms I freeze in the future. Another great educational video.
OMG I can not believe someone would complain that you dont wash your hands! However, I had to quit watching Wellness Homesteader, due to her wiping her nose touching her hair and then tasting with a finger after she put her finger in the food...I made a comment to her and she took it offensively. I watched her a couple more times and I believe it is a habit of hers. She cant help it! lol I cant believe someone would think you arent clean I can tell by the kitchen you are!

An egg slicer is the only way to slice even large mushrooms. It must be a good quality. All I have used for at least 45 years
Is there any advantage to vacuum sealing before placing in the freezer?
You can sauté the sliced shrooms and keep them in the frig - they will last a couple of weeks or more this way. Keeping them whole in the frig, they should last at least 4-5 days - keep them in a ventilated container, and use the ones on the bottom first - the package they come in is usually ventilated. I just leave them in it with the plastic wrapper pulled over the top of the box.
This is in the connivence of your own home. Not in flippen fart restaurant!

Did you know that if you let your pan get hot first and then put the oil in it you can achieve a higher burning point with your oil?

I bought two 8 oz. packs of sliced mushrooms. Unexpectedly had to leave town in a hurry. I froze them in the store packaging. A month later I brought out a pack of frozen mushrooms, rinsed them and used in soup, the other pack in sauce (without sautéing first) Both turned out well and as a bonus it kept the wonderful liquid in the cooked mushrooms. I don't recommend for longer term storage as I'd be concerned with freezer burn.

Pam, I recently came across a proper done study from a university I believe, that said first slicing mushrooms then laying them out in the sun for 15 minutes before cooking/ consuming increases their Vitamin D content substantially.
Forgive me I cant recall the details but I've no doubt you will super sleuth your way to find it if interested.

What another great idea, I will be doing this when I can get to our Costco,other stores only have 8 ounce packages. Love mushrooms but I can hardly get to the stores.

We grow our own Shiitake mushrooms ( there is a process and harvests always depend on the weather ) and let them air/sun dry. Take the stems off to put in a blender for soups eggs and stews. The caps are dried and put them in zip lock bags on the shelf... rehydrate when needed.

I use a spam slicer to cut mushrooms. I was in food service for 50 years, I wash my hands more than doctors do. And it's not like your touching their food. How often do you think those people that wear gloves wash their hands? Those people I don't trust.

I would like to know how to preserve fresh mint for tea, etc. I tried washing, air drying and freezing in ice cube trays with water. Very unsatisfactory.
Instead of air drying, just wash and freeze fresh in ice cube trays with water.
I do have a question. After flash freezing, is one able to portion into sandwich bags and place them in the gallon freezer bag? Thank you.
We do not have the capability to flash freeze. What you are suggesting sounds reasonable, but the best way to find an answer is to do a Google search. Make sure you read numerous sites to most accurate answer. Jim

It is great that we have options! There are some foods I like preserved only one way, and others, like mushrooms, that I like frozen, dehydrated, and freeze dried. I have never canned them...a new way for me to try! LOL
