My man, nice video, but you made the pig chip wrong, there's a way easier method that gets you crispy skin without being hard to bite. In Brazil we call torresmo.
As a Mexican I don't blame you especially since Chicaronnes are my Least favorite and they're uncomfortable to bite on Fish skin and Chicken skin sound more promising

Ok yall guys know chicharon because you're a filipino, but unlike others, they call it pork skin,or haram in muslim countries,he didn't know chicharon and maybe chicharon has the other ingredients.
The Cow and Pig skin are best prefer to be leather materials. I like chicharon from here in my home country the Philippines. Perhaps you lack of proper cooking to the pig skin to become chicharon.
Well to prepare a cow skin chips you need to dry it boiled it first then dry it then boiled it again with seasoning then dry it again otherwise the cow skin chips or Rambak as we called it would taste like a crunchy cardboard
The pork chips are what we call "pork scratchings" and are worth be given a fair chance. There are recipes for it but find one where it's just roasted in the oven instead of frying. Best way to do it imo.
My man lost the chance of calling the salmon one FISH CHIPS
