Recipe:
Noodles
- 300 g all purpose flour
- 1/2 teaspoon salt
- 2 1/2 large eggs
- 1 to 2 tablespoon water (15 ml)
- Add water or flour as needed
Beef and broth
- 5-6L of water
- 900g brisket
- 6 scallions (3+3)
- 6 slices of ginger
- 6 pods star anise (3+3)
- 1 tbsp cardamom pods
- 2 sticks cinnamon or chinese cinnamon
- ½ cup peanut oil
- 12 cloves garlic
- 1 medium white onion
- 1 piece palm sugar
- ½ cup dark soy sauce
- ½ cup mirin
- ½ cup light soy sauce
- cracked black pepper and salt to taste
optional: soft boiled eggs and chives

Can we take a moment to appreciate how hardworking Erwan is? For one, shooting these cooking videos certainly needs a lot of preparation, most especially since he does all the filming by himself. And then comes the cooking itself while filming at the same time..and cooking and filming again. But the work doesn't end there as there's still a lot of cleaning up to do and a lot of dishes to wash and dry and to put back in mommy's cupboard. Weew, such an industrious man! Kudos to you, Erwan! Ugh you make it look so easy to make. I’ve been hunting the best beef noodle soup here in NY before covid times. I found a few spots but seeing this with that egg, just wow. Add a little chili sauce -perfection 👌

I made this for dinner for the family tonight and it was yuuuum! It took a while but definitely worth it. I didn’t have mirin on hand so I used equal parts rice wine vinegar (as advised by google) with an additional 2 tbsp of sugar to balance the tartness of the vinegar. If you’re in a hurry like I was (ie. you don’t have the full 3 hours to reduce the broth) I cut the beef into smaller cubes than recommended and after only 2 hours, the beef tenderized beautifully! Thank you Erwan for the wonderful recipe and I will be making this more often during the winter months :)

I feel you Erwan, it takes time to cook. I used to make my own fresh noodles too, making the beef broth, not to mention all the cleaning and prep., but IT'S REALLY WORTH IT!
