Bicol Express by Solenn and Erwan Heussaff

- So Solenn and I are proud halfies and we love to eat Fillipino food. It's something we grew up and something we would never say no to. As i like to do with dishes, we took one of our favourite recipes, a Bicol Express and decided to put our own Heussaff twist to it. Increasing the heat of the dish as well as the variety of ingredients. Give it a go and let us know what you think in the comments below!
Chop up 3 large chillies and 2 small hot chillies, 2 lemongrass stalks, 1 red onion, 2 tablespoons of chopped ginger, 2 cloves of garlic.
Chop up about 300 grams of pork loin.
Fry up all the vegetables in one pan, until brown.
Brown up the pork.
Add 2tbsp of peanut butter and 2 tsp of shrimp paste to the vegetables. Mix well. Add 3/4 cup of coconut milk to the mix. Stir in the pork.
Sear the scallops in butter or olive oil (or in the pork fat), about 2 minutes per side), season with salt.
Deep fry some bits of pork skin.
Top the bicol express with calamansi or lime, chopped chives, coriander, the scallops, crispy pork and toasted coconut if you have some handy!

Shiiit that looks sooo good, Erwann. And this reminds me of a Tausug dish called Beef Kulma (Curma/Kurma in other languages, I think) because of the coco cream/milk + peanut butter combo. Can you look into that recipe and maybe bastardize that too your way? Ugh! I'm drooling! Looking forward. 😁

Hahaha cnu may sabi sa inyo na taga laguna ang nagimbento nyan? Misleading yan ahh, kung makaangkin.. Ang nakaimbento nyan ay tagabatangas hindi taga laguna, and it is called bicol express dahil yan ay isinunod sa pangalan ng train byaheng bicol which is "bicol express" but still ang talagang name ng bicol express is "ginataang sinarapan na may sili" talaga ang tawag dyan which is a dish from bicol but the main ingridient of that dish is yung maliliit na species ng shrimp yung ginagawang bagoong, hindi katulad sa bicol express na baboy ang ginagamit.. Put more research bago magbitaw ng salita kasi, i have proof dito sa sinasabi ko, because it is already featured in PINAS SARAP hosted by kara david ..
Please don't call it BICOL EXPRESS if you are doing it totally way different than the original recipe, it's actually a disgrace to locals.

Before soysauce was introduced in the Philippines adobos main ingredient was simply vinegar and salt. So i find it funny when people are just a bit ofended because the cooking done in this video is not ‘original’...Filipino dishes I think are some the most versatile food, and should be celebrated by creating different versions of dishes and not just the original. In Thailand, food hawkers compete for the best pad thai, curries, etc, they create their own version and theres always competition, that is why thailand is famous for their food.
