I didn't notice this, despite playing the game through and watching this scene multiple times before that Vamp is actually catching and throwing back the knives as Raiden deflects them.

As a kid, I thought Raiden was honestly just trying to kill him, and Vamp was just enjoying himself too much... because he's a vampire and vampires like bloodshed.
I'd love to see them remaster this cutscene specifically It's some absolutely phenomenal cg-cinematography. But age has not helped this cutscene in one particular area. True-to-Life speed By that I mean they're using the illusion of having characters have an almost-silhouette following them to represent the blur of high speed movement. It's good for the time, but if you compare this to some of the action you see in Metal Gear Rising's cutscenes with Raiden it definitely shows the improvement of updated technology. And Rising was made EIGHT years ago now. Imagine the improvements to CGI we'd get for a cutscene like this Now!
Have you noticed how very ballet like Vamp's movements are? The way he moves is so very dance-like and I absolutely adore it. Thanks for the awesome video. :D
The fact that raiden can move tonnes of metal with his limbs pretty much means he has super cyborg strength but it does not do good against a elusive target like vamp

It has to do with psychology. The theory is, large animals invoke a sense of fear, such as whales etc. And in the battlefield. This can be an advantage.
