- Ingredients
1 butternut pumpkin, quartered
2 tbsp olive oil
salt and pepper to taste
1 tbsp sumac
1 large onion, diced
6 cloves garlic, diced
1L chicken stock (or veg)
50g butter
50g pine nuts
parsley for garnish
1 tbsp cream (optional)
toast to serve
Method
1. Place the quartered butternut onto a tray, drizzle with oil and season with salt, pepper and sumac. Roast at 180c for 40 minutes or until cooked through and the flesh is soft.
2. In a large pot over medium heat, pour in the olive oil. Once hot, add the onion, garlic and some salt, and saute for 3-4 minutes.
3. Once the pumpkin comes out of the oven, scrape the flesh out and place it in the pot with garlic and onion.
4. Pour over the stock and simmer for 10 minutes before you blend with a stick blender (if you don't have one you can just use a masher for a chunkier soup).
5. Toast the pine nuts in the butter until golden and finish with the parsley.
6. To serve, add the soup to a bowl and garnish with cream, pine nuts with parsley and serve with toast on the side.
7. Enjoy!
That is a butternut squash here in Texas. A good substitute for pumpkin
I thought “that’s not pumpkin.” Thanks for clearing that up. 😊
I was thinking the same thing. Must be an Aussie thing 😂
@@scoutndad1941they're called butternut pumpkin here so it's technically still 'pumpkin' soup
Butternut Pumpkin
@Jimbo-64Then why do they have different names. I can understand you saying they’re from the same family, but the same thing?
Definitely making this whenever we get "winter" in Baton Rouge
Lol when hell freezes over lol
Jesus Christ our phones are getting way too advanced 💀 Watching Hells Kitchen literally rn and one of the contestants keeps talking about his hometown Baton Rouge 🤣🤣🤣
I’m in BR too I’ve been making pasta salads for weeks because it’s so hot haha
Shout out here from SoCal: do the Gulf states ever get winter? 🙂
@@janneaufire4762 we may get 1-2 weeks of actual winter
Butternut squash soup is one of my favorite fall/winter dishes.
This is SO ACHIEVABLE even in a busy home, the tiny additions and details will be much appreciated in this household.
I often add yam and potato to this recipe for more depth and body. One of my favorites. Thanks for sharing 👍
... and I coconut milk... 🥥 tastes great...
Do you ever sneak in some parsnip? Yum.
I need to use more yams in my cooking. Thanks for mentioning them.
@@lisamckay5058 never tried adding parsnip but I'm going to remember that for next time. Thanks for the idea!
Yes! Butternut! Best pumpkin ever
Looking forward to this delicious soup in cooler weather. Thanks chef!
The way u respect all ur ingredients is lovely to watch....no wonder uncle roger gave u the title of uncle andy❤
One of the best "hug in a bowl" recipes, for sure, and there's so many creamy soups to choose from! 😊
Agreed
It's a very easy soup to make and absolutely is very comfy! Great share.
That looks amazing! In the US we call that butternut squash soup. You version looks particularly fabulous.
I was sitting here tripping thinking that looks like a butternut squash. Thought maybe they had some other weird pumpkin where he's from that we didn't know about 😂
@@dreichert1438 well, to be fair, Australia does have some pumpkins that the US doesn't and vice versa. Also, all pumpkins are squash but not all squash are pumpkins.
We call it a butternut pumpkin 🙂
@@dreichert1438 in many other countries “pumpkin” is a term which I think generally means winter squash but usually specifically butternut squash. I think America is unique in naming one style of winter squash “pumpkin.” When we visited Australia in October 2011 our Airbnb hosts were preparing to leave for a pumpkin carving party, and their description of it was “we’re going to be hacking up a pumpkin.” If you imagine them associating pumpkin with butternut squash that’s a pretty funny picture. After they went it all made so much more sense to them.
@@vzmkitty It's indeed confusing because I don't have experience cooking with either except for a few various pies with pumpkin quite some time ago. Would love to explore it more and definitely butternut squash soup. Thanks for the info and cheers
Mmmm looks amazing yummy love homemade soup never out of a can. Thank you for sharing chef Andy have a blessed day stay safe and healthy. 😋😋😋🙏❤🙏❤🙏
Wow...yum
Butternut squash is my favorite soup❣️‼️
I appreciate that Andy left the pumpkin stains... Cooking isn't always clean and pretty 😊
I use yoghurt rather than cream, like the sour offset. Making chicken stock from left over roast adds to the adventure. Roasting the pumpkin will add to the flavour, will try that. Love the show!
We call these Winter Squash here in New England and roasted or just boiled and mashed as a colorful alternative to potatoes, they are one of my favorites!
Same in Canada and it’s yummy
Butternut is what we call em in Texas. 🙂
No sir we call it butternut squash here in New England
I guess different part of New England from me cause I also call them butternut squash
@mariankay6482 Canada too!
In Austria we also drizzle a teaspoon of pumpkin seed oil on top. Gives it a very nice touch!
I came down with a really severe cold and I tried out your recipe. Got better the next day. You’re one of the best chefs I’ve ever seen with amazing content❤❤🫶
I always enjoy your videos but lately you're taking my soup game to a new level, thanks! You also converted me to tomato soup!
I love simple recipes that anyone can make because then, you are making the most elegant-looking dish, accessible.
Thats a new one for me and looks scrumptious! Just like chitterlings, please. 🎉
Unfortunately I have never had the opportunity to try pumpkin soup but the way you make it is so appetizing I definitely want to try it now
Hmm.. I wonder how this would be with yam or sweet potato. I must try. Looks lovely!
With Sweet Potato & or Potato is Yummy!
Winter down under... Summer here in the states... much love from USA 🇺🇲
All I can say is yummy can't wait for pumpkin season to try this thanks andy
Yum!! It's 90 degrees where I am, and I am missing winter and all the soups, stews, and braises - my favorite foods!
Very simplest i cooked yesterday love from🇳🇵🇳🇵
Nice loop!
Plus. Just cutting it into quarters saves peeling and dicing... cheers mate!
Looks just like the butternut squash soup we make here at True Food Kitchen! Lovely.
Yh he even used butternut squash lmao I just. Didn’t see pumpkin 🎃 🫣
@@adamvarley4334 they are called butternut pumpkin in Australia/New Zealand . as they are from the pumpkin family
Everything you show us looks so yummy
I love his no nonsense ingredients and way of cooking
how about his "no pumpkin ingredient" way of cooking?
Nice job chef!
Some tteokbokki would be super comforting right now.....
It’s definitely butternut where I come from, I add some sweet potato and green apple to mine and roast them altogether, it’s yummy!!
Try steaming the Pumpkin with Bacon Rashers on top gives the pumpkin the perfect salty taste and cooks the bacon perfectly
Looks great!
Love it! If you ever get a chance, a touch of pear enhances the flavour of pumpkin soup. Highly recommend.
Really? I never heard of that, will definitely try it next time!
That sounds like a great addition! Any details you'd care to share on your definition of a touch, and maybe how you add the pear, would be appreciated. I could see about anything from fresh pear to baked to a drizzle of nectar contrasting with the creme fraiche. Thanks for the tip!
I wish it was winter for me. It's 30°C and so humid. I want pumpkin soup and a sweater!!!
Yum! As a Michigan native that's right up my alley.
Was searching for this recipe, and I'm so frickingg glad that Andy did it.. now I know it will be very good
Love soups. This looked amazing. 😊
Made this yesterday for the wife to take to work for lunch, very simple and super tasty. Cheers Andy
Yummy! Andy is one of my favorite culinary artists! Cookbook request for christmas❤
Favorite soup for the fall time
Omg I love pumpkin soup 😍😍 looks delish
That's a winter favourite in Germany, too! As is Rheinischer Sauerbraten... For Isabelle, please 😊
I made it yesterday and tasted like unspeakable pleasure. It is very comfortable and tasty food. Thanks a lot
That soup splatter is too real. Also, I really like a bit of curry powder in my pumpkin soup. You should try it some time.
He also should try some pumpkin in his pumpkin soup😊
@@debramehan8644technically they are all “gourds”. The word pumpkin has no association in botanical terms. Nitty picky without the need to,m. Also all blended to shit too.
@@debramehan8644jack-o-lantern is a pretty terrible variety for food.
@@guangdali6460 a pumpkin is a pumpkin, and a butternut squash is a butternut squash. Not picky, just correcting.😊
@@debramehan8644you’re wrong though. Many cultures don’t make a difference between the two and use one word for them.
Love you Andy! 🎉
That’s butternut squash here in the US, but looks amazing! I actually prefer this to actual pumpkin soup. Lookin good Andy!
Delicious 😍
Looks delicious 😋
I liked how he didn't cut that sip. Down to earth ❤️

One of my favorite soups!
Looks delicious, well done.
Hey Mr. Andy. Love your cooking. You seem to prepare a lot of vegetarian dishes extremely well. Would love to get your cookbook in IND. Your Baked Cauliflower with Cheese looked delicious, as did your Apple Crumble & the soups. Cheers.
I just ordered your cook book 😎👍 yay!
I’m also a big fan of fried sage as a garnish for butternut squash or pumpkin soup
🎃 is my favourite comfort food. That looks divine 🤤
Stealing this definitely for upcoming autumn/winter. With probably pumpkin seeds toaster and/or grilled/fried chickpeas. Thank you, Chef for the inspiration!
Butternut is my favourite squash
Hello from British Columbia Canada
🇨🇦🖐👍❤🖌🎨🎠🎪🌳🌲🚐🌴🤳
I love pumpkin soup and you do it as I like it. Can I come to dinner??
Love it, thanks Chef Andy.
Fave of mine and my kiddos
Love love love butternut squash!
omg looks awesome, drizzle extra virgin olive oil on top too next time, trust me
I am trying this right now! Will let you know 🙂
Andy roasts the pumpkin a lot further than I do. I'll have to try that, I think you probably get more flavour out of it. I do use garlic olive oil on the pumpkin, though, and that definitely makes a difference.
You do! It sweetens it a bit more
Greetings from Puerto Rico 🇵🇷 here it is made with the boiled pumpkin, the different process of the roast is interesting. It looks just as good 🤤 I'm going to try.
Humba Bisaya please..❤❤
This looks sooo good.
You did a great job
Looks amazing chef! A must try!
Definitely try when we get winter
Thanks chef. I grow all the ingredients except for salt pumpkin and butter. So pretty good for me ❤
Fantastic. Making it tomorrow
Yum! I do enjoy a good soup
Looks great man. Though that pumpkin looks a bit quirky though-
Still gonna request for Filipino Tapsilog!
Yummy!!❤
The side eye at the spilt soup lol
It looks really gooey 😋
That looks good. If you have pumpkin sweet potatoe and carrot, please add as well . Also roasted whole cumin seeds. Take it to a whole new level😊.
Did not know butternut squash was pumpkin in your neck of the woods. Love this soup. Make it almost every winter here.
Me too. But i only puree half of it. Love the chunks of squash😊
they are called butternut pumpkin in Australia/New Zealand . as they are from the pumpkin family
Can’t wait for winter!!
i appreciate that you kept the messy part of cooking be messy for awhile until you went to next step.
Butternut squash... Still a lovely souping veggie.
Might as well make this here in the UK given that our summer has been so shit
That looks absolutely divine. Is this one in your cookbook??
