    Very good version. Always too many work frying eggplant first before cooking

    Mrs Ah Pa is 100% right. I make similar version but without the mince. After eggplant fork-tender then just add remaining sauce ingredients direct to pan and simmer a few more minutes. The eggplant skin helps hold shape. Lebanese, Indian nor Japanese eggplant preferred to Italian globe type eggplants for this reason. I think a good chilibean paste is essential to the dish.

    Hi, Ah Pa, today dinner, I cook your wife favourite eggplant dish. If I have minced meat, spicy bean paste & black vineger, the eggplant dish sure taste absolutely delicious. I use minced bean paste (tau chu) mixed with minced chilli padi, turn out 80% good. Tq Ah Pa for sharing

    Lightly oil eggplant than use air fryer to cook it.than stirfry in pan.less oily and 😋

    If don't have dark vinegar, use what to substitute!

    Remove all skin from the egg plant (you can't eat the skin cucumbersome when eating have to take away skin each time). Cut french fries size. (1cm x 4cm) Pan press with good amount of oil till cook soft (at least 10 to 15 min). Press all oil out and set aside. You cannot use the wood laddle. Use the wok stirer (wok chan). Remove extra oil on wok and add in garlic mince, chopped shallots, chopped red chilli, mince meat, seasoning (oyster sauce, light soy sauce, dark soy sauce *color*, dash maggi soy sauce, shaoxing wine, sugar, maggi white pepper powder, starch). Chopped or cut long green onion. Water right consistency. Serve
