I'm just having a hard time to believe any dog would just do that and disregard their own life.

Many dogs have a protective instinct, and unless they've been hit with a weapon before, they really don't know the obvious outcome. There are also many stories about dogs disregarding their own safety. After her brother died traumatically, the dog really isn't that big of a shock to me.
