My sister brines all meat before cooking, especially poultry, as it kills bacteria on the surface. She is a chef, and says when you cut into unbrined meat during your prep, you push surface bacteria into the interior, where it can survive cooking. Good plan!
Catherine Moore, brining has a very minimal affect in killing bacteria. What it does is cause the meat to exchange it’s natural liquid with the saltwater and seasonings in the brine, thus making the meat juicier and more flavorful. What kills the bacteria is cooking yo the proper temperature and doneness.
You might be surprised at the people who would not even consider eating that deer meet, your a servivor who knows what he's looking for, and your resourceful at finding food.

Cool and laid back video and good use of terrain for shelter. Lucky with weather and scavenged venison. I found small hand lines baited with earthworms for trout and a heavier tackle for pollack baited with tinfoil/feathers and limpets from an overhanging rock worked really well. The midges are ravenous but no real bother. Have you encounted sheep or deer ticks yet and how did deal with them?

Well I have been going to this area since I was a child and I know the deer population is very over populated (you can see by the state of the vegetation in the video). Therefore many die of starvation around the end of winter if the spring bloom is late and they have used up their fat reserves. It's not a good idea to eat dead stuff you find, but i was pretty confident it had died of starvation and thought if i cooked it well it should be fine :) If you have an idea of the environment you are in, you can make an educated guess. But again, it's better to eat fresh meat. Hope this helps

Sorry for late reply (been away from a computer for a while). Yeah it's called the right to roam act. If you google it you can get more detailed info. It's an awesome law! You can fish in the sea with a rod for free. For fishing in freshwater Lochs it depends on the land owner. Some charge, some don't. You can usually get away with fishing for brown trout, but on a Salmon river you can get a huge fine if you don't have a permit. Lighting fires you need to be careful with, but if you are out of site from houses keep it under control and clean up afterwards, people usually don't mind. Hope that helps.
We have been very inhibited by our culture about eating the food we find. Once by the sea I fished a few sea snails/murex and had the hamletic doubt whether to cook them and eat them or not. Asking around rarely helps as most people mostly do not know or do not want to take responsibility in answering. I ended up cooking them very well done and eating them and they were above average commestibles. However the tellinas/wedge clams I digged from the sandy bottom of the sea (just about a dozen) later on were superior. One will never know what means to get oneself/catch wild food until one does not try and do it. As said before it is mainly a struggle against our habits, education, culture, etc. Outside from a bit of work too...

Glad you are getting out there and trying it out. that deer looked a bit dodgy - but i guess it was ok as you are still making video's and you were there survey the animal in real life ... Personally i wouldn't have eat it ... I would have cut off the antlers though . Nice little video I have watched a few now
Yeah it wasn't the best idea I have ever had! haha! But boiling it for a long time is going to kill all biological hazards and I wasn't in a area where it could have chemical toxins in it, so it was pretty safe. Thanks for watching!

If you got a better camera with a higher quality microphone your channel would blow up in all honesty. You have an accent, are in a foreign country other then the US and are doing things that others envy. People enjoy these types of videos.
