    Hi Kristi! The marshmallows on the pancake bake reminded me of spring colors on a paint pallet. Very colorful. I have to try the Shepard’s pie. Who doesn’t love Shepard’s pie? Your mashed potatoes look so creamy. Guess the egg yolk does the trick. Better go take out my ground beef from the freezer now. 😋🤗

    I just had to tell you that I made the shepherds pie for dinner and it was delicious! I forgot how much I missed that comfort food! Hubby loved it too!

    I thought the melted marshmallows on the finished pancake bake looked like flowers & looked very pretty. Your Shepards Pie looked SO delicious! My mom made that when I was growing up & it was so good, I really liked. I would love to make it now, but my husband doesn't like it. Drats! For a small meal prep, it looked great!

    I have never tried adding a yolk to my mashed potatoes I think I will try that with mashed cauliflower and see how it works!

      Would you believe my daughter bought that for me at Walmart? I love it! She thinks it's just the Walmart brand - Mainstays or whatever it is. :)

      All the stores around us have it. Just any kind that says reduced fat or made with 2% milk. We've gotten it at Walmart, Publix, Target, Winn-Dixie. I can't remember if I've gotten it at Aldi or not.

    I also have UC - Apriso has changed my life. I’ve been in remission for 5 years - good luck - it’s a horrible condition

      Thanks so much!! Congrats on such a long remission period!! It sure is a horrible disease!! It's like my mind wants to do this and do that and my body is like, not so fast there!! Ugh!! I was actually on Apriso this last time around. The first time I got in remission was with Lialda and I stayed in remission for 7 years. Then the insurance decided to make a change and say that anyone using Lialda needs to go to generic, so they changed it, which caused me to go into an immediate flare. My doctor called the insurance company and pleaded with them, I called and pleaded with them, but they wouldn't budge. It's so frustrating that the doctors' hands are tied. So my doctor tried Apriso a couple years ago. It worked well until last year. I'm not sure if my having Covid had anything to do with it or not. I knew I was slowly coming out of remission. So, now I've added the Canasa back as well (I use both when I'm in a flare). How many/much do you take a day? He has me taking 4 pills each morning.

      Yes - I was on Lialda, as well, before Apriso. My insurance also forced me to start the generic version, which I have tolerated very well. I’m also on 4 pills, once a day (which has helped me be much more compliant with my meds and might also be part of the reason for the remission). I was on the Canasa for flares, as well - which were horrible before the remission). I’ve found (I’m sure you have, too), that the WW lifestyle definitely contributes to keeping the UC in check.
      Keeping you in my thoughts - flares leave you so weak and the interrupted sleep just adds to the exhaustion. Get well - hopefully this flare is a short one.

      @@Hipfan01 Thanks so much!! I appreciate it!! You're so right - WW has taught me so much about healthy eating and what foods are good for my body when I'm not in a flare. I just struggle when I'm in a flare. But I know, with patience, it too shall pass! Thanks again!!

      I actually used to add a whole egg years ago but that seemed to be a little too runny. My aunt told me to try just yolk and it worked perfect! :)

    I make your pancake bake recipe all the time! I have used different berries and fruits and sometimes no fruit. Most recently, I bought a Pampered Chef Waffle Stick Pan and used your recipe. It makes 6 waffle sticks, somI have to make 2 batches.

    I use your pancake bake recipe often. I add half a teaspoon of baking powder and an extra egg to make the pancakes fluffier. I love having them prepped in the fridge.

    Your breakfast bake is a masterpiece. I have never seen Shepards pie made with a tomatoe sauce base we use beef broth and onion soup mix and mashed potatoes and creamed corn not cheese. Looked good though.

      Thanks so much, Katherine!! The shepherd's pie was really tasty this way! We did need to add some salt to it though. Other than that, it was good! :) Your version is similar to how I always used to make it. But I've always used cheese..LOL

    Sorry to hear about Scubbie. I have a 12 yr old chia. formally named Shaggy, but we call him Spot. By chance did you get Scubbie from Motley Kennel in Drexel Missouri. If so I think Spot was Scubbie's brother.
