Something no one ever knows about anymore, tanning hides by hand. Tanned everything from a weasel to moosehides. Knowing how to sew, not just regular sewing, but leather and fur sewing and even mundane types such as darning socks, no where to be seen.
Something lacking, how to the best meat harvesting device. snares. Can made hundreds from a spool of cable, a few boxes of washers and a few boxes of nuts.

Demos were animal butchering, fire and a few others. The demos were ok but too long to film

Farmers have shot guns but it’s not common. Air rifles not sure of but you can only use stuff on private land which not many have.
