  • Today I will give you my best Khao Soi recipe. Khao Soi is the most famous Noodles from Chiang Mai. If you like Northern Thailand food, make sure you try this Chiang Mai curry noodles. It is egg noodles in rich coconut milk and curry paste, topped with crispy fried egg noodles. You will not be disappointed, I promise! This is my guide on how to make it from scratch, at home 😊

    • 600 g chicken meat
    • 3 bundles of egg noodles
    • 250 ml Coconut milk
    • 2 TBSP Palm sugar
    • 150 ml water
    » Paste (can make Kao Soi 2 times)
    • 10 red dried chilies
    • ½ tsp salt
    • 1 TBSP shrimp paste
    • 1 TBSP chopped kaffir lime skin
    • 1 TBSP chopped lemongrass
    • 1 TBSP chopped turmeric
    • 1 TBSP chopped fingerroot
    • 2 TBSP chopped garlic
    • 2 TBSP yellow curry powder
    • 3 TBSP chopped shallot

    Nin, I have eaten many foods from many cultures around the world. I have to say that Khao Soi in Chiang Mai is the best thing I have ever eaten in my life. Sometimes I dream about it. Thank you for the recipe! I will try making it for my wife and hope I can make it almost as good as the streets of Chiang Mai!

    Khao Soi is my favorite Thai comfort food dish! I love Nin’s authentic preparation. They included the shrimp paste. For many westerners that’s a difficult flavor/aroma but if you leave it out you will notice its absence. Use it!

    Thanks for this. Visited Thailand a few years ago and went to a small local spot and had this great dish. Even when it felt like 100 degrees outside and no air conditioning we loved it. ALso had some awesome Khao Soi in Toronto

    When I was on Koh Phangan last year I met a chef from chiang mai who cooked Khao Soi for us and it´s probably my favorite meal ever. It was a little bit more soup / curry like though with small chicken pieces . But besides that it looked very similar. I´ll definitely try this recipe out! :D

      I think you should cook shrimp separately to make sure it will not be overcooked. So when your soup is done, add the shrimp.

    Looks amazing, can't wait to try your recipe! My partner doesn't like shrimp paste in our curry pastes because she finds it gives too much of a 'fishy' flavor that she doesn't like. Would you recommend that we substitute the shrimp paste for something else, or just leave it out? Kop khun ma kap :)

    Hello Nin and All, I have tried this recipe for Saturday dinner. I had not read the comments, so I did use cumin instead of tumeric. My perspective is that it is somehow close to chicken Tikka Massala style. But with real chillies. I used papardelle pasta. I have air-fried some spaghettis for the crispy bits, next time I will fry (I don't like the oil smell in the house). The European in our house (me) liked it and resisted to chillies, Asians (wife and daughter (50/50)) found it hot, is it not funny ? Please continue to post, it is delicious cooking style

      I'm not sure I understand your question 😅 but I will answer what I understand. I made Khao Soi paste by myself and the only curry I add in it's a normal yellow curry powder. This dish mostly cook with meat or vegetable but not fish at all. Hope this help 😊

    In your recipe above, you say the paste "can make Khao Soi two times". Does that mean the amounts of all the paste ingredients are for 600 gm of chicken or for 1200 gm of chicken?? Very confusing, but it looks delicious so I don't want to mess it up! Thanks!
