I worked on one of these today. The plastic sleeve over the copper probe, do you remove it or leave it on? I swear it looks like something that should be removed
This gas valve can be replaced in 15 minutes without draining the tank ! Been doing this for 30 years ; Turn off water supply , Release the water pressure with the TP valve and close again , Swap out the gas valve quickly , Only a few teaspoons of water comes out .
So I bought a replacement exactly like the one you show, because the pilot light wouldn't stay lit and I checked the resistance and it was as it was supposed to be, so it wasn't the pilot tube. So I go to install it, I'm almost done and the stupid nut on the gas tube that goes to the main burner (the biggest one that fits into the valve assembly you show) .. the nut gets stripped! So I bought a tube flare tool (cheaper than a new burner just for a nut), but now I don't know which nut to buy. What size are they?
before replacing valve. try tapping around the valve with a heavy wrench (crescent), rotating the control back and forth...until flames shoot out of the burner. works for me every time. pilot must be on and thermocouple working. 30 year water heater, here!
You have an electronic system n not the old pilot thermocouple system? If newer electronic system,look up related systems/ model. If older system,n pilot won't light,replace thermocouple. About 10 bucks found at local hardware store.

I notice that the old one has what appears to be mineral deposits on the copper probe inside of the plastic sleeve. Does this interfere with the operation or is it not an issue? If the valve is otherwise functional, should the probe be soaked in vinegar or something?

if you can find the replacement part. I have a Whirlpool/Sears and they no longer have the part available. I'm going to see if I can find a generic one.
Nice. I wish you would have gone thru the re-lighting process and mentioned the water system bleeding as well. Air coming out of the faucet might make a person think they did something wrong.
try draining the tank of sediments...there's right way of doing it. shutting off the main water valve, opening the sink faucet and draining water into washer. adding heat saving tube adapters to the top of the water heater, that screw into the inlet and outlet pipes, worked for me. water heater blankets.
Maybe I'm stupid or very stupid but that connection is so stupid that I can't understand it at all. We are in 2025 and so much technology and they still have stupid things like we are in 1950.

From what I learned it gets left on. I think the plastic helps the copper last longer in the hard water

I accidentally took the plastic covering off thinking it was part of the packaging ! (Silly of me!!) Will it be okay? Or should I buy a new one?

Question: the flame off after 3 minutes on. Every thing else fine. Main valve control need to replace?
What’s the yellow stuff filling the clear tube???? Do i need it!!??
I get the pilot on and it runs when i turn gas knob to on , my problem is when i turn thermostat up the flame goes out , what you think ?

I would have checked for gas leaks before I filled the tank with water .

What do you do if you do find leaks? Take apart and add more thread sealant?
Or add thread sealing plumbers tape like i do

It cathes any sediment that might come from the gas or in the pipe vs going into your appliance.
you might need to open the relief valve to drain the tank
The water was not clean and water pressure was unstable and drain with air after I replaced the gas control valve
