Ahh I found this in the manual.
The best process for successfully grinding chicken, squirrel, quail, and rabbit bones is to do a Double Grind preparation. The first grind should always be done with the Wagon Wheel grinding plate. Then for a Smaller Grind follow up with a second grind using the 8 mm (the second smallest hole diameter grinding plate) or 10 mm grinding plate.
    And
The temperature of the meat is VERY IMPORTANT. Your meat should be as COLD AS POSSIBLE without being frozen solid. Most professional butchers grind their meat at 34°F. The consistency should be crunchy
to the touch - NOT frozen solid. If your meat is not cold enough when you grind, it may ball-up in the front of the grinding head and may result in charring of the meat and meat by-products (fat, blood, etc.). The resulting black char or sludge will need to be cleaned from the grinding head, cutting blade, and grinding plate. This charring, while unsightly, is harmless.

Is the grinder still working for you? I got the same one in Nov 2020. Trying to raw feed my cats so I grind chicken drumsticks and thighs like you do. My grinder gave up at some point so I sent it back to the factory for repair. They ship it back to me but I still think my machine is not working. Either that or I’m not good at using it. But I had great success before when I just bought it. Any tips you can share would be appreciated!

Hi Dev X. What size grinding wheel did you use for the bones 4mm (5/32")
    8mm (10/32")
    10mm (25/64")
    12mm (15/32")
Also the chicken parts seemed soft. I believe they recommend near frozen. Have you tried near frozen?

Absolutely for my dogs! STX Turbo Force II Electric Meat Grinder. It grinds soft bones such as chicken + with ease. I'm not endorsed or affiliated with STX. No subscribers either. I'm just using this platform to reach out to the family, close friends and anyone that loves their babies as much as I. They built for the raw diet even if its whole chicken!

The manual says not to grind bones. It will void the warranty and tear up the machine.

It says not to grind big bones like beef, pork, deer, bones.
