I used to work at a sushi bar and we made miso soup from scratch similarly to this. Just on a much bigger scale people loved it. Brings back memories of my chef firing anyone who fucked it up i was so lucky that I’m a fast learner. He was not for the faint of heart. He fired anyone who messed up the sushi rice too. I understood that because he bought the very expensive traditional equipment used to mix and fan it.
I have been making a quick miso soup every morning for the last week. I mix a teaspoon of the paste with a tablespoon of soy sauce, a tablespoon of vinegar (but you can use mirin), and a tablespoon of sesame seed oil. Add some diced tofu and chopped green onion then pour boiling water over it. It is quite tangy and just a really great way to start the day.
The good thing I saw about Japanese food is that a lot of it is customizable and you won't get slandered unless you do something that's absolutely horrendous.
I'm curious to know if cream cheese in sushi for california rolls is the japanese equivalent of how italians feel about pineapple on pizza in terms of cultural food crimes.
@@marielaberge8236Italians don’t like anything that isn’t traditional. I once told an Italian about how I sometimes like to make a dish that’s basically just carbonara but you replace the egg with butter. They were horrified
@@HumperMarketing replacing the egg with butter doesn't make much sense tbf, the egg is the emulsifier between the pasta water, the fat from the bacon/guanciale and the fat from the cheese

Finely julienne the boiled, softened Dashi Kombu/kelp to also be a Miso Soup ingredient. Save the boiled, softened Katsuo Bushi/bonito flakes to use on top of Tōfu, cooked spinach, cabbage, etc. with a bit of Shōyu/soy sauce. Taking full advantage of resources and not wasting is a way to saving more money personally and the environment.
I absolutely love Miso soup. Sadly, after moving to where I currently am, I can't find a good Miso soup at any restaurant out here, so home made it is.
