    Hey Nice video at what temperature would you say you are cooking fried rice in? if you had to guess 350 F??

    • @TheFlatTopKing
      @TheFlatTopKing  3 ปีที่แล้ว

      Maybe it started there but the temp keeps creeping up to around 450 is my guess. My veggies were thawed so that helps the temp stay more stable with out dipping down.

  • @rugerruger4032
    @rugerruger4032 3 ปีที่แล้ว

    Did you pre-cook the rice prior to putting on the flat top? It sounded like you say that at the 2:38 time mark?

    • @TheFlatTopKing
      @TheFlatTopKing  3 ปีที่แล้ว +1

      Yes I just cooked the rice in a rice cooker the day before per the package instructions. If you do this the day before and put in refrigerator it will allow the rice to cool and not over cook.

    • @TheFlatTopKing
      @TheFlatTopKing  3 ปีที่แล้ว +2

      Kinda. Biggest thing is to coo the white rice before you cook it. Wash the rice till the water is clear. This elements the starch and makes more of single grains.
      2. Try to cook the stuff in the shrimp liquid. This really helps with the flavor.
      3. 2 cups of white dry rice. Makes about 4 cups. per package instructions.
      Preheat griddle to around 400
      1 Saute 1 onion and about 1 cup of thawed frozen peas and carrots until the onion is tender. Move on to one side of griddle.
      2. Add about 4 tablespoon butter and add rice and cook until the rice is hot and starts to fry. Add some Soy Sauce about 1/4c. taste before you add shrimp. season rice with pepper and garlic.
      Mix rice and veggies move to the side again
      Allow the temp to come back up on the flat top around 400 again.
      Add 2 tablespoon butter and 1 lb shrimp. cook bout 2 min and once the juice starts coming out the shrimp mix all together. cook all ingredients until the shrimp is done.
      Let me know if can get you closer.

    I wouldn’t add more salt when you have the rice on the griddle as it pre-cocked and then it should has salt added already. It could make it very salty.

    • @TheFlatTopKing
      @TheFlatTopKing  2 ปีที่แล้ว

      Not so sure about that. I used low sodium soy sauce. At every single Japanese Steak House i have been to the salt and pepper their rice all while adding soy sauce to make fried rice. There is room for balance with out going over board
