    Great podcast the other night with the Taco Man ( his words ) I really enjoyed it! My question about the kick ash basket is does it help keep the ashes out of the bottom vents? I have heard some people complain after about a 5 hour cook they have to take the meat off the PK 360 and clear the ashes because the vent is plugged, if that’s the case then that would suck!

      Thanks for watching the podcast. I haven’t experienced toe problem that you described with (or even without) the Kick Ash Basket. The KAB makes it so that the coals burn longer before the ashes fall to the bottom so you might have more fine ash but you shouldn’t have as many if those small sunburned pieces of charcoal at the bottom so I think it’s worth the trade off but I’ve never experienced having a plugged vent.

      @bassman7496 I did a pork butt. I don’t remember how long it was but I know it was a lot more than 5 hours.

    Another great video. Awhile back I made Malcolm Reed's Mississippi pot roast recipe on my 360 and it turned out great. I used an old aluminum 5 qrt dutch oven that I picked up at a flea market and it also was able to fit under lid of the PK with the lid on the oven. I'm glad you liked the basket. I think what Buel Gammill was saying below was that you had the support legs for the divider under the lump. I put my divider in the opposite of what you have yours with the support legs on the side where you had the pot.

    I live in Vegas and in the summer I always cook everything I can on the grill. It helps keep the house cool. Great video!

    I've got a PK360 (here in the UK) and I have got to give this a go. I'll have to make do with the PK grills ash basket though but I reckon it'll be fine for a cook like this. Have to say you've got a voice that's real easy to listen to. Great channel so I've clicked subscribe. Thanks for making such great content.

    Pot roast looked good but after using the KA basket in your PK what do you think about it? Any negatives?

      No significant negatives.... it's purpose is to help more efficiently use the fuel. The design allows you to tightly contain the coals while allowing good air flow. It does the job and it's a clear improvement over the smaller charcoal basket that PK offers. It's not an exciting accessory but it gets the job done.

    PK's design seems to place their thermometer where it is in the way. Too bad that they can't fix that. Putting it on the top of the hood pointing down might work better from a fitment perspective, but I imagine that might make it read hotter if it is at the top.
    Also, am wondering if you can buy the charcoal basket with two dividers? That way you could have 2 strips of coals - one for each side, leaving room to put a water pan between them?

      I agree that you have to be aware of the location of PK’s thermometer as it can be in the way. That is probably the only significant flaw in the 360’s design.
      I’m not sure about a charcoal basket with two dividers (I haven’t seen one) but I bet someone out there has made one!

    Hi Kenyatta, if the KA basket you are using was designed for the regular PK which is smaller than the 360, aren't you losing fuel space? By the looks of it you are. I was contemplating whether or not to buy one for my 360. I do like the concept.Tell me, is it any easier controlling temps in the 360 using the KA basket. I for one have a very hard time trying to get it where I want it and stay there. If I want higher heat, let's say 350-375 range should I use lump instead of briquettes as fuel?

      Hi Mike.... one of the advantages of using a basket is that it helps to contain your coals, making for a tighter fire. Also, the shape of the KA basket allows the coals to sit almost perfectly under the cooking grates. In other words, you won't lose any significant amount of fuel space with the KA.
      I bought my 360 as part of package that came with PK's charcoal basket which is more shallow than the KA basket so I found it much easier to control temps with the KA. For higher heat, I would use lump instead of briquettes. Lump burns hotter and faster than briquettes. I hope that helps!

      @@BackyardSmokeMasterBBQ Thanks a lot, that is a big help. Today I smoked a whole chicken about 5 lbs. I used a full chiminy of B&B briquettes on the stock charcoal grate. I was looking to run it at 350 degrees. I couldn't get that temp. It started out at 400+, I adjusted the vents to lower the temp but it kept dropping and hung around 300 +/- a few degrees. I need more experience adjusting the vents I guess. Oh well. Thanks for your reply and advice, much appreciated. Stay well!

    What’s your thoughts on the pk 360 vs kettle or even Komodo? I’m torn between the performer or the pk 360! I don’t see my self doing huge cooks, maybe even separate the point from flats on briskets and rib cooks and etc! I will be just grilling, smoking, and baking!

      All 3 are fine especially if you’re not planning on doing large cooks. If cooking area is important, then I would rule out the PK360. In terms of budget, you can do everything on a kettle… it’s probably still the best value buy available. If you’re going to do a lot of smoking at low & slow temps, then you should probably lean more towards the 360 or Kamado because of their efficiencies & versatility. Ultimately, I think it will come down to your budget & how much you’re willing to spend but all 3 are good choices. Hope that helps some.

    Thanks for the great video. Looks like a much better solution for proper airflow than the PK-provided basket. One question though: How is clean up afterwards? It seems as though the PK basket would do a better job at holding spent coals. Do you just brush your ash out afterwards?

      Clean up of ash is easy.... I use a shop vac to get it done quickly. You could also brush out the ash with a small brush (i.e. a paint brush). I also recommend (even though I often forget), placing an aluminum pan under the grates to capture the grease.

    Great video K. I really like the Kick Ash basket and didn't know about it until this video. Apparently lots of other PK owners like it too because it's out of stock I bought the PK basket right after getting the PK and only used it three times. It restricts air flow and takes up space where you could put charcoal.

I really like the PK basket better, exactly for the reason mentioned in this video...too much airflow speeds up the burning process.but if you do low and slow you want to slow down the burning process, and not having to constantly feed charcoal into the basket....doesn't that make more sense?

      Their website says that the basket works on both the original & the 360.

    Can the KAB be installed without the charcoal grate that came with the PK or is it a problem because it sits directly on the two ash covers that cover the lower vents

      Yes, you can use the KAB without the charcoal grate but it will sit directly on top of the ash covers. I haven’t tried it but I don’t think functionality would be affected.

      Thanks for the reply and all your video’s are amazing. I noticed when you smoked ribs on your PK that you didn’t use the charcoal grill that came with the unit. I’m just concerned that with it sitting directly on the ash covers it would cause the covers to warp or have poor air flow

      Thanks…. I don’t recall not using the charcoal grate…. must have been an oversight. I don’t think it would necessarily warp the ash covers but if I were forced to choose, I would definitely use the charcoal grate with the KAB.

      I already had a number of grills when I got my PK. I had made up my mind about it far in advance, I was just waiting for a good deal. AmazingRibs.com had a special promotion that encouraged me to pull the trigger.
      I was sold on PK because of the build quality, their reputation & the grill design makes it easy to grill at high temperatures or to setup 2-zone cooking.

      Yes, I still like my 360. It’s extremely well made & versatile. However, it’s not as portable as I envisioned when I bought it and the shelves give it a large footprint. It’s not my most used grill but it would be a grill that I would consider if I could only have one.

    Hope you check this. Great video BTW. I noticed in the video that you have a Lonestar Grills offset and the PK....I am tiring of my egg and strongly considering a 20/36 LSG. However, I LOVE the portability of the PK. Curious as what your opinion is for smoking and grilling on either the LSG and PK. Chris makes a basket for the LSG so you can grill - but it is definitely not portable. If the PK can retain some heat and make a decent brisket - seems like an easy choice for an all-in-one grill, smoker, and portable tailgate/camping type grill. Thoughts?

      Hi Nolan.... the LSG & PK are very different pits that will give you a different cooking experience. If your main goal is portability, then I would lean heavily towards PK but not necessarily towards the 360. ‘The 360 has a much larger footprint than I anticipated when I got mine. While I envisioned taking it out with me, the large footprint has caused me to leave it in my backyard. PK has a new portable grill (the name escapes me) and a grill that comes with a foldable cart. I’d consider one of those grills if portability is your main goal. I think all of the PK grills are extremely well made & they are great values. They are versatile and can easily be utilized for smoking & grilling.
      As for LSG’s grilling add-on, I haven’t read about many people utilizing it often. I’m sure it works as advertised, but if you spend all of that money on the 20/36, I think your best experiences will come from smoking low & slow. I bought a number of add-ons with my 20/42 that I rarely/never use but I sure do enjoy smoking low & slow with it which was the main purpose. Ultimately, I think it comes down to your budget & main priorities. If you’re looking for the ultimate challenge & reward for your efforts, then I’d lean towards LSG. If portability is most important, then I’d lean towards one of PK’s truly portable models. If you want something that’s versatile & kind of portable, then I’d go with the PK 360. I hope that helps!

      @@BackyardSmokeMasterBBQ Yes - Thank you. You are referring to the PK Grill TX. Yes was looking at that too based upon size etc - just the difference of having two grills/smokers vs one. The thing I go back'n forth on is direct low and slow vs indirect aka Snows BBQ vs Franklins. My last few cooks of beef ribs, pork ribs, and even my first brisket using the egg with an elevated grate produced great results without the need for water or the diffuser plate. Just used three fire bricks on the fire ring and let the fat, coals, and smoke do its thing...Thanks again and continued success.

    Glad to see you’re doing well & hope your family is the same. Very nice cook. I can smell it from my house in NJ. Looks like Sunday dinner to me...I’m sold! I liked those gloves. I’ve got some that look like those big foam hands and wish I had some that provided my fingers with a bit of dexterity. What is the temp threshold and brand of those gloves?

      Yes, you can easily fit a 9 x 13 pan inside either way. You can even fit two 9 x 13 pans side by side (the long way requires a little scrunching of the pan). The larger 9 x 20 1/2 pan fits perfectly the long way.

    On the "Kick Ash" basket, why did you put the divider support under the lump charcoal, rather than on the other side? I bet it would last longer if it was not under the heat!

      The divider was not under the lump charcoal. I used the divider to keep the charcoal on the right side of the grill while the food cooked over the left side. This allowed me to setup 2-zone cooking.

      I took another look at what Buel described & I think he was trying to say that I should have positioned the divider so that the charcoal would be on the side that didn’t have the support rod underneath. I don’t think it makes much difference in the amount of charcoal that I could use.... more of a nitpick than anything else but that’s ok, I still appreciate the feedback & support.

      I probably used my Go Pro with my chest mount or with a hand held stick in this video. I may have also used my Canon M50 for some shots. I’ve never used a head mount in my videos.... I find that the chest mount gives a better vantage point of the grill & it’s easier to quickly glance at the screen to see how the framing looks.

      I bought it as part of 2-pack of dutch ovens by Tramontina at Sam's Club. I used the larger one in the video which I believe is 7 quarts. I think the smaller one is 4 quarts.

      Between the two, I’d choose the Summit Kamado Both are versatile & well made but cooking on the Weber is easier overall.
      I bought my PK because I thought it would be my portable charcoal grill but it actually has a large footprint. It’s easy to remove from the stand but it’s just not as portable as I thought it would be. Now they sell the PK GO.

      The PK360 is a fantastic grill. Just make sure that the cooking capacity is large enough for your needs.

    I loved the video, but I don't know how you call that "pot roast". Beef stew, maybe, but not pot roast. When I make pot roast, I do not cut it up. It is cooked whole until the end, when it simply falls apart.

      What do you mean? The entire video was about the Kick Ash Basket model for PK Grills. They also make round baskets that fit inside other grills.

    You need to use a different camera when filming. The ultra wide angle lenses is horrible. No depth perception, almost enough to make you sick.
