    Io da italiana ovviamente plaudo alla seconda versione. Ma....cosa dicono i cugini francesi che spicca solo il Parmigiano e nn ci sono manco le uova e la pancetta? Penso tollererebbero una quiche Lorraine con Parmigiano al posto del formaggio usato più tradizionalmente da loro....allora noi nn ci arrabbiamo se altri fanno la pizza con ananas oppure a Parigi la pizza con la panna insieme ad altri formaggi! evviva la democrazia in cucina e le nuove idee, sempre avendo bene dentro la propria storia culinaria anche semplice ma assolutamente ricca! A livello di estetica, meraviglia il piatto finale!! Da esporre in vetrina insieme alle creazioni dei dolci più " a gioiellino"

    The second version looks like a jardiniere filled with goodness, pleasing to look at and certainly most pleasant for the tongue. Beautiful! I am an huge fan of the traditional quiche with eggs, smoked lardons and no cheese though. Easy to prepare, delicious accompanied by green leaves salad. But I have to try to make the mousse. Thank you for the inspiration.

    Io adoro questo canale, adoro vedere gli chef italiani all'opera nelle loro cucine, spiegare piatti della tradizione italiana, o del paese nel quale lavorano. Vi suggerirei di dare meno importanza alla pizzeria in generale, ormai non se ne può più. Gente che parla di impasto come se stesse parlando di medicina o ingegneria... Basta, siamo stanchi. W l'italianità, viva la pizza, ma diamo merito a chi ha dedicato la sua vita l'innovazione e alla sperimentazione REALE.

    Giusto una precisazione, lo chef parla di "lardo" probabilmente traducendo in modo errato "lardon" dal francese, che in realtà significa pancetta. In italiano "lardo" è tutt'altro 🙂

    All hail Sophia Loren! When I was a small boy, still a couple years shy of the onset of puberty, I first glimpsed her in House Boat. Lack of puberty be damned, I was positively mesmerized by this impossible goddess. There was no rewind on broadcast television, no VCRs on which to re-watch a favorite movie -- nothing to bring my Vision of Perfection back to me, even if just for a brief moment of neurochemically-induced euphoria. So I scoured magazines and watched for television broadcast schedules in the TV Guide, and captured every moment of this magnificent woman.

    I will definitely be trying the tips I picked up from here, like using 00 flour for the pastry and what looks like whipped cream or at least thicker cream than I have been using. My personal taste would be to have a slightly deeper quiche than this with a greater ratio of filling to pastry but obviously I say that with the greatest respect. Looks delicious, thank you.

      That's what is usually called 'Double Cream', that has 30-40% fat content in it.

      @@holandaxd Thank you. I just googled and I think in the UK at least whipping cream has 35% and double cream at least 40 (google says 48%.) I think from the consistency at least it looks stiffer than the double cream I'm used to, more like soft peaks of merengue or what I would call whipping cream.
      Thank you though for your reply. I used to experiment with whipping the egg whites before combining but it didn't really get the results I was looking for. I will try the fat content you suggest and see if the consistency is what I see in the video

    As a man from Lorraine I can tell that this is not the original recipe, but the vision of the chef… The quiche lorraine is a much more simple dish, you don’t cook the lard before putting it in the quiche and you use smoked ones ideally… And of course NO CHEESE!!!!

      Per preparare una classica quiche lorraine, in genere si utilizza il Gruyère della Franche-Comté, o un buon formaggio Comté.

    ok questa gliela passo, ma "padellare tutte le verdure una per una" non mi sembra proprio o è un francesismo anche questo :). Bel piatto e a vederlo anche molto goloso, ma che con la Lorraine ha veramente poco a che vedere. Lo definirei piuttosto una millefeuilles aux legumes et parmesan à l'italienne.

    Ma perché i cuochi dicono "il nostro Parmigiano, le nostre verdure, la nostra pentola"? Perché indugiano nella ridondanza dell'aggettivazione e delle costruzione verbale, per cui ormai non si dice "tagliamo il peperoncino" , ma solo ed esclusivamente "andiamo a tagliare il peperoncino", quando non ci si muove di un centimetro per sminuzzarlo? Perché promuovono la cucina Italiana (il loro lavoro), ma non la lingua Italiana? Mi fa male al cuore tanta inaccuratezza...

    First version doesn't follow the ingredients of a quiche Lorraine and doesn't even look anything special...he just had to add Italian cheese because basically everything has to have cheese in Italy lol... Second one is nothing like a quiche... Just cheese on cheese on cheese in different forms. I mean if you just wanted to taste cheese just have a fondue or a cheese board

      exactly what I was going to say, looks delicious but that is not a quiche lol "Quiche is a savory French tart with an egg custard (eggs, milk or cream and seasoning) and fillings baked in a pie crust."

    in realtà lo chef dice "lardo" in quanto in francese la traduzione di "pancetta a strisce" è "lardons", da qui il lapsus. L'altra traduzione di pancetta è "poitrine" ma si intende la pancetta intera, il taglio di carne o le strisce.

    N'oubliez jamais, chef Tringali, que les recettes traditionnelles étaient, en France comme en Italie, la cuisine des pauvres. Combien vendez-vous votre quiche dans cette boutique qui contribue à chasser les pauvres du centre de Paris ?

    C'est du n'importe quoi, c'est peut étre de la quiche, mais pas de la quiche Lorraine, jamais de fromage dans la quiche Lorraine, surtout du fromage Italien, vous ne pouvez pas faire un plat Lorrain avec des ingrédients Italiens !!!!!! faite du couscous avec des lardons
