A few things when smoking cheese 1) when cold smoking you want the smoke moving across the cheese quickly, so leave the top vent wide open, 2) with soft cheese an hour in the smoke is plenty, and 3) the cheese needs to be wrapped and rested for at least 2 weeks for the smoke to mellow. Try these steps before frying the way you did and the smoke wont be so much in your face.

I use a pellet tube and smoke cheese and salt and garlic and pepper. Turns out great and friends love my smoking.
