How to Make British Brown Sauce 🇬🇧

- In this video you will learn how to make better brown sauce than you can buy.
Brown sauce can be found on every British breakfast table. It is tangy, fruity and spicylicious!
No bacon butty is complete without brown sauce.
Ingredients:
6 apples, cored and chopped
1 onion
250g soft brown sugar
570ml malt vinegar or cider vinegar
250g dried and pitted prunes
2-6 cloves of garlic, chopped
1/2 tsp of cinnamon
1/4 tsp grated nutmeg
1 tsp allspice
1/2 tsp hot pepper flakes
1/4 tsp cardamom seeds
2 tsp salt
1 tsp black pepper
2 tbsp Indian tamarind paste

I've never tried Brown Sauce, but I followed your recipe. I tasted it straight out of the pot. It tasted delicious even though it hadn't cooled and matured. I put it in some half pint Mason jars, and water-bath processed the jars, so I can keep them on the shelf. I can't wait to see what it's like when it's matured a bit. I used Braeburn apples because they're very aromatic.
Braeburns are great apples I agree. The sauce will improve if kept for at least a month, but pressure canned sauce will last years. Try it on a bacon sandwich 😋

I made this yesterday and haven't had brown sauce in over five years. Living in the Philippines it's difficult to get where I am.
I didn't have malt vinegar so used a combination of cane, white and apple along with a splash of lee & Perkins as substitute for the lack of tamarind. I used black cardamom and wow. It came out brilliantly.
It's even better today. Congratulations on such a simple and very authentic recipe. Highly recommended to everyone!

Pete Thomas No thank you. Would love to see more condiments videos and some pickles would be great too. We have a curry house here in El Nido and we now add a tsp of your brown sauce to our Vindaloo. It makes it better than any curry you ever had before. Try it.

@@LazyCookPete honestly not only is this brown sauce a 1000x better than the shop bought pap that they sell. But for me as an expat I cannot buy it where I live. So to make it with my own apples, apple cider vingar, peppers, garlic and I might even try my own plums...this makes a better than organic HP for me and my hubby to enjoy with our own home grown home cooked chips and our own free range eggs. Beating the profit based greedy system never tasted so fantastic! Cheers again. Oh and we drink our home made cider and wine whilst eating it too!!

Good explanation and we'll organised, Pete! Am off to my local ethnic supermarket in Parma, Italy to stock up on the ingredients, particularly allspice, might be a problem but l hope it turns out ok if I can't find it. Malt vinegar isn't available in Italy but will use apple cider and spirit with a splash of balsamic.

This looks really good. Would love to try it! Have you tried cassareep? It's a sweet black sauce from cassava that can preserve meat so you don't have to refrigerate it. I used it in one video.
I'm not familiar with cassareep, but it sounds very interesting. I have had cassava 'mogo' chips and cassava bread, which are wonderful.

this recipe looks amazing. Just wondering if it can be water bath or pressure canned for longer preservation.
Pressure canning is always preferable Lynn, especially for large batch long-term storage. My method shown here is okay for small batch short-term preservation of pickled items.

I’ve never had brown sauce but I really would like to try it. Did an ancestry test and apparently I’m English and Scottish 🤷♀️

Provided you follow good principles for preserving, and each jar has an airtight seal, there is no reason why this sauce wouldn't last two years. Once opened, each jar should be kept refrigerated and used within two weeks.
@@LazyCookPete 2 weeks? Really? It's got fruit and vinegar and sugar. It should last nearly forever. Like ketchup.
@@kvfoley Unopened, it will keep for at least two years. As a creator I have to err on the side of caution when I give advice, so I give the same advice most manufacturers give here in the UK. I personally keep opened bottles and jars of this for longer, but it doesn't last long anyway because I love it!

Yes it is similar to HP sauce. Ironically, it probably originated in the Indian subcontinent as perhaps a tamarind sauce.
Definitely have to try this. I bought some HP brown sauce for a recipe. I had never had brown sauce before, so I wasn't sure what to expect. I thought it was a bit too sweet and had too much cinnamon. BTW, those people who claim that A1 sauce is a good substitute are absolutely, totally wrong. It's not even remotely like brown sauce.
The best thing about making your own apart from the price, is that you can tweak it to match your own taste. I never make it quite the same every time, I always adjust something and experiment with other fruits and spices. You are right about A1 sauce, it is no substitute for British brown sauce.

I've always hated brown sauce - my dad always says that bacon isn't bacon without brown sauce and that I should try it a few times until I get used to it and like it -and one day he will swap our sandwiches when I am not looking (mine with ketchup and his with brown sauce) - but I always say that that's the kind of behaviour that puts parents in care homes when they get older.
My brother is ketchup all the way, but we don't fight over it, each to their own I say.

It's not a tomato sauce, it is a British brown sauce. I don't use tomato in the recipe. I love tomatoes but they don't belong in this recipe.
Eat some brown sauce and you just can't stop producing....Brown sauce....all day long..
