A fighter pilot is trained to handle up to 8 g's. The average person can handle 2-5 g's.These poor, innocent theme park attending souls.
Raptor as long as the time spent in that g force is extremely small, damage is minimal. Fighter pilots also have special gear that helps them withstand the Gs, so it’s not so much though training, but it doesn’t hurt.

I think the problem with the roller coasters is the max height to length ratio. The lift gives the cars gravitational potential energy, which when the cars progress downward along the track is largely converted to kinetic energy. However, when the cars are moving, kinetic energy is lost to friction and drag. If most of the total kinetic energy and potential energy is lost to friction, than the cars will arrive at the station at a reasonable speed. If, however, very little energy is lost (compared to the total initial potential energy) because the ride was too short for its length, than the cars will arrive at the station at a very high speed and the riders will die. Therefore, you have two solutions to your problem: one, Make the rides longer so that there is more time for energy to be removed from the cars via friction, or two, make the rides less tall so that there is less initial potential energy and therefore less energy that needs to be lost via friction.
