      This episode is 2 years old. They show these on PBS for a couple of years before they post them on TH-cam.

    The buckle is SO easy and fabulous! I use browned butter in the batter and just fold in the berries raw without any extra sugar.

    Made the Strawberry Cheesecake Bars recently, and they were delicious! Rarely does anything I make look like the picture, but these did! FYI, the bars freeze well. After giving quite a few away to family members, I still had many more than I alone should eat, so I froze some. I ended up eating most all by myself anyway, but at least it was over time and not all at once!

    As someone on a diet, and a huge fan of America's Test Kitchen, I'm learning that being fat is a whole lot more fun.

    Made the buckle. Cannot begin to describe what the lemon zest and the topping add to it. Only had blueberries and apples. So added a little cinnamon to the fruit.. Will make again. Will try the cheesecake bars next.

      That’s why they’ve lasted for 22 years! Incomparably better than any other cooking programs! However it won’t last much longer since it lost its founder Chris Kimball!

    Never cared for blueberries. I’d have to use another kind of berry (probably strawberries). I also would have to either double the berries and zest or maybe a little less than doubled (but not by much).

    On the strawberry cheesecake bars, I've never seen the graham cracker crust call for flour, what does the flour do for it?

    • @pennyleer
      @pennyleer 2 ปีที่แล้ว

      I was wondering the same thing at first, but I think it's because it's a bar and not just a "pie" crust. More cohesiveness.

    Is there a reason she didn't use cake flour for the buckle?

    • @getoffmydarnlawn
      @getoffmydarnlawn 2 ปีที่แล้ว +1

      I imagine it's because they're looking for a sturdier crumb to hold up against the fruit and streusel.

    Love you to pieces, but that’s not a buckle. A buckle is equal parts self rising flour, sugar, and buttermilk. From there you can add whatever filling you want.
    Maybe it’s a northern thing, but that’s how we defined a buckle in The South.

    • @RAGordy
      @RAGordy 2 ปีที่แล้ว

      Forgot the best part. A piping hot baking dish with a stick of butter melted in it. Personally, I let the butter brown slightly, then pour the batter into it.

    I really don't understand why America's Test Kitchen that seems to care a lot about precision gives us recipes with some absurd measuring info like 9 whole graham crackers. WTF? :D What kind of crackers? Do all of them weigh the same?
