- Turkish kofte with eggplant puree and tomato sauce! Kofte is basically a meatball. We use koftes in many dishes and so with the eggplants. In this version, I made an eggplant base as we say in Turkish"begendi" and place the grilled koftes on top, drizzling tomato sauce over it with grated cheese. With a final cook in the oven, it comes out delicious...

Ingredients For Turkish Kofte with Eggplant Base & Tomato Sauce: (4 serving)
For the puree base:
3 big eggplants
2 tbsp butter
2-3 tbsp olive oil
2 little bit heaped :) tbsp flour
about 3/4 cup whole milk
salt
about 1/3 cup grated mozzarella or kashar cheese
For the Kofte
350-400 gr. ground beef
1 medium-size onion
2 slices of old bread
less than a tsp salt
1/2 tsp each ground black pepper, cumin, ground hot red pepper
1/4 tsp baking soda
4-5 drops of lemon juice
For the Tomato sauce:
3-4 tbsp olive oil
1 tbsp tomato paste, 1/2 tbsp red pepper paste
2 cloves garlic
1 tomato, 1/4 cup hot water if needed
more grated cheese on top

According to a 2005 study undertaken by a private food company, 291 different kinds of köfte (being the Turkish word for kofta) were found in Turkey, illustrating the importance of the dish in the Turkish cuisine.Turkish variations include a meatball stew called sulu kofte; batirik koftesi, a vegan variety that uses tahini as a binding ingredient instead of the usual egg; cig kofte, made with bulgur and sometimes raw meat, and icli kofte, a deep-fried bulgur paste shell stuffed with kibbeh; and many others.
