That was very entertaining! Your guest star was quite well behaved. One of our staples is pickled daikon (radish). In Japan it's called takuan but Korea, China, and most other Asian countries have their own versions. There are also several kinds of pickled seaweed. Probably the most common is makombu tsukudani.

We Brits would pickle anything if we could. Beetroot, eggs, onions, shallots, cucumbers, gherkins, cauliflower, we even have sandwich pickle which is a mix of vegetables in malt vinegar, and piccalilli which is a vinegary, mustardy vegetable condiment for sandwiches and in a ploughman’s lunch. Next time you are in the British section of a store you should try some.
J&L - you made me laugh with the beets (or beetroot as we call it over here) - beetroot and especially pickled beetroot is one of my favourite things...roasted beetroot is also a good option as well ...you could grill a steak and have a side of roasted beetroot, feta and rice/cous cous...yummy!
Pickled pearl onions, pickled cauliflower are a couple I can think of for you to try. I can only find the cauliflower in with sweet mixed pickles. Someone else I watch loves pickled okra but I have never tried it so I don't know what they are like. Pickled pumpkin is also good.

In the UK we have pickled onions ( I think you tried some crisps which were pickled onion flavor) If you ever see GARNERS brand of original pickled onions or Pickled shallots or sweet silver skin cocktail onions (,which are sometimes served on a cocktail stick in a Gibson cocktail), give them a try. There are other brands such as Baxter's, but Garners are the best.
One thing they used to do in English pubs (which you don't see so much now) is put pickled eggs in packets of crisps. I personally liked them with salt and vinegar crisps. I am also a fan of pickled jalapenos as part of an anti-pasti alongside slices of meat and cheese. Pickled beetroot is not something I like at all.

I love dill, sweet, bread and butter, pearl onion, beets, pumpkin and I don't know how many more. LOL
I would probably like the asparagus one. I have never seen them here. I love beets pickled or otherwise. LOL

The pickled bologna could be used in a survival pack. If that was all I had to eat, I would eat it. LOL I have tried pickled egg...gross.
It's great on crackers with cheese and (optionally) a little yellow mustard on top.

We eat them here a lot in the US too. At least in my area.
I've seen a jar of pickled Pigs feet... and no i didn't try it lol.
The eggs and onions should be in malt vinegar not white vinegar. I love ham and pickled egg sandwiches, but it needs lots of butter on the bread.
In England fish n chips shops sell pickled eggs, I wouldn't ever try and egg 🤮
