      Yes our market is fantastic, fresh products, from local producers and with high quality. The freshness of our fish is also priceless as you can see in the video...

      I've was there a few years ago. Next visit I'd like to find a class on cataplana cooking. May look into renting a place so I can cook too(not in a family friends kitchen). My husband had to keep reminding me I couldn't buy stuff to cook in a hotel room. Hope to have a drink at your hotel then too.

    Aqui no Brasil, se tirarmos a batata e o vinho ,adicionarmos nesta receita azeite de Dendê,tempero baiano,leite de coco teremos nossa deliciosa moqueca!!! hum páreo duro hein !!!!!

      You can, but I recommend using a pot with a tight fitting lid

    Tengo una cataplana igual a la que esta usando el Chef,no la he estrenado porque dañe una olla preciosa,haciendo una sopa de mariscos y pescado con tomate,al poner el tomate se mancho y se dañó. Que debo hacer para que no me vuelva a pasar esto? Hay alguna forma de “ CURARLA”?
    Agradecería mucho si me dan un consejo para estrenar mi cataplana !

    I'm sorry but it needs piripiri for spice and more paprika for colour...this is not the way I'm used to and the sauce shouldn't be watery... that's for British tourists!

    Não é de lei nem nada higiénico como cozinheiro bem sabe mecher com as mãos sem luvas nos alimentos expostos

      O correto é usar luvas sempre que o alimento já estiver pronto para o consumo e o manipulador for pegá-lo diretamente com as mãos. Por exemplo: para montar saladas já higienizadas, montar sanduíches, cortar pães, arrumar as batatas fritas no prato do cliente.
      Se o alimento ainda será submetido a algum processo de cozedura, fritura ou assadura ou se o alimento, no caso de vegetais, legumes e frutas, ainda será higienizado, não precisamos de luvas.
      Também não precisamos de luvas se usarmos um utensílio para manipular os alimentos.
