Hi Tammy, Catfish would work. I would fry the catfish first before putting it in the soup, I'm not familiar with the taste or texture of Catfish but frying any fish before putting it in the hudutu soup will make it taste better. Please send me an email for the recipe (thencameroatan@gmail.com)
You bring the soup to a boil before adding the fish. If you fry the fish, you only need to simmer for 10 minutes. If you don’t fry the fish let it simmer for 20 minutes. But you have to constantly move the soup around so the coconut milk doesn’t separate. Instead of stirring it, you push the spoon up and down. Because if you stir it, you will break up the fish
