And the mousse au chocolate cake because the other day I experimented along that line, even though a little bit different: I used silken tofu + melted dark chocolate + aquafaba foam for the mousse, which worked well; I tried a aquafaba sponge cake recipe for the dough, which totally failed, but plan B pound cake worked well.

If you ever get to Atlanta, Georgia, try to stop by Dulce Vegan Cafe. Their baked goods are amazing. I moved away over a year ago and I miss that place.
hey have you checked out chicory root? dried chicory root? nice for a coffee replacement. been wanting to try as powder in a cake like the first one here. i have to figure wheat free probably buckwheat : that looks like a great recipe. need to get baking!
You could always try :) I try lots of replacements for things - sometimes they work and sometimes not. When it does not work, I try something else until it does :)

Phoebe A oil can be substituted with mashed banana, applesauce, or any puréed fruit when baking. One to one ratio ex: 1 cup or oil = 1 cup of applause (unsweetened) hope that helps

Every time I add melted chocolate in the aqua faba it always collapses :( What am I doing wrong?
