Best way to cook tripas is boil with salt onion and garlic until tender enough to push a fork through easily. Drain and fry in pork fat until desired crispness. Be sure to drain before frying in a seperate pan the taste will impress you for sure

Live in Texas as a kid and was never Introduced to them until 2015-2016 when I worked at Exxon Baytown when I was 26-27 years old. Life changed! Then Barbacoa, then lengua, menudo, tres Leche among tons of other authentic Mexican tacos and food and desserts!
But hats off making your own! I tried once and after boiling off fat the3 lbs shrunk down enough to fry one taco worth of “tripas” hahahaha

I usually clean mine twice and on the second wash I soak them in water with like 1 cup of Vinegar to remove any type of smell. Then I boil them, Drain The Water. Then Cut & fry them in light oil. 45 minutes tops. 3 hours is too long my guy ✌️✌️
