I think what's amazing about Turkish food is that it incorporates Arabic and original Turkish and Persian and Greek and Caucasus and Balkan traditions together and then in turn Turkish cuisine influenced all these other cuisines.
Turks other than their own food, also get some inspirations from other cuisines and never make it the same, they make lots of Turkish touches on them and make them to another level, and other people from those cultures come to Turkey to just eat these food.
