I've eaten this cake all my life. :)) My Mom's cakes tasted like pure honey. It is best to use dark, strong-flavored honey (forest, thyme or buckwheat). Light color/flavor honey (such as linden, acacia or orange flower) are too mild for this cake, so the flavor is lost in the baking process. Your variation of this amazing classic cake is stunning!!
