Thanks for a great video explanation above XL6009. Just notice, you mention this regulator only is a BOOST converter. Uptodate, this XL6009 now is available in both version, at same PCB. That's means, it's a BOOST and BUCK converter.

first thing remove the inductor from pcb and place new inductor with 4 wire just like transformer which has two coils a secondary & primary, now connect primary coil to XL6009 SW pin and input VCC. Now the second coil i.e. secondary coil will connect at GND and diode to which gives the output, that's the modification you can do and make its buck-boost converter
at 3.3v its not enough for XL6009 use atleast 4v input for better opration, you can also see the datasheet where shown efficient working range from 5v to 32v

make 25 turns for primary then make other 25 turn secondary coils after that connect primary coil to Vcc and Switch pin and other secondary coil will be output after diode
wind two 0.6mm wire parallelly of 30 to 40 turn and one coil goes to Switch pin of XL6009 and other to VCC input, and other coil is the output which is connected to diode and GND. The inductor core is taken from SMPS dc filter, size is Outer diameter = 17mm Inner diameter = 13mm width = 6mm
Bhai circuit diagram ke saath show kiya hota to thoda samajh bhi aata, log theory ke saath relate kar paate. Remember, diagrams are the universal language of engineering!
According to datasheet the conversion efficiency is max 94%, but if you take higher current like above 2A then its efficiency decreases as shown in datasheet

in the input max current limit is 3A, giving 5v 1A works fine

You can not increase wattage. If your input 5V 1A, than it can only output 12V 0.4A.
So You need to Supply 5V 3A to be able to get 12V 1A.

output amp of xl6009 is maximum 3A its maximum rating of xl6009 IC
