Since a couple of weeks we have a wood fired oven ourselves. So much pleasure cooking your recipes with the kids. Your productions are amazing to watch! Please never stop entertaining and informing us with your cooking adventures!
Another triumph -- what a great idea! I was actually worried the base of the oven would be too hot, but those cookies came out perfectly! That Barbera looks great btw! Not a bad life to be sipping on that while baking some cookies in a wood-fired oven!
I want to be your friend and dinner guest! You are a magician with the wood fired oven. I love your calm demeaner, your accompanying music, and of course your amazing content. How very intriguing, looks like your expertise in the wood fired oven produced a very nice result. I have one more planned run with my oven before winter sets in. Maybe I'll try finishing the evening with some nice cookies! My only twist will be making them gluten free as not all my guests can eat gluten. Sometimes you can just swap out the flour, other times you have to get creative....

What I like to do for the cookies, is to roll in saran wrap plastic the cookie paste like a sausage and put in the refrigerator for few hours. After that it's easy to cut then with a knife about around 1 inch slide.

Morning from the UK Clive yet another quick question. I notice you were using a tin lined( I guess) copper pan for the butter. As the owner of some very old copper pans I know you have to watch the temperature so as not to melt the tin. Question do you use copper a lot? nice cookies by the way
You're right about tin lined copper, but the one I was using is a bilaminated copper/stainless steel pan. Tin will melt above 450F/230C. I don't use copper too much. I mainly use stainless steel, carbon steel, and cast iron. Episode 22 I cover the cookware I use. Thanks for commenting. More to come. Clive
about how big is the inside and opening of your oven? ive been thinking through how to build one, and have seen everything from mud, all the way up to yours and similar builds. i know the shape is very important, and it seems insulation is equally important.

Great stuff. Tried them tonight, and they tasted fantastic....but for me they didn't hold their shape and spread out wide and flat. I cooked them in an electric (180c) and wood fire oven (~160c) but didn't get a similar shape, had them in fridge for 8 hours. Any suggestions?
Not sure I can say for certain where it went wrong. Did you bake them directly from the fridge? Otherwise they wouldn't hold their shape well. Or maybe the temperature wasn't quite high enough. Keep trying!

Yes, you can freeze the individual balls of dough. Give them plenty of time to thaw and proof again to room temperature. Let me know how the chicken turns out. Clive
The chicken was a hit, as usual. Everyone could do shots of that gravy. The first 4 cookies got a little burnt, yet it stopped no one from eating them. The second batch was perfect. Thank you for upping my wood fired oven game chef. Larry.
