Wow! Those are CLEAN! I was amazed at how those came out of the package. I always buy twice what I think I need when I buy cheeks since I know I have to trim so much to get useable portions. Whoooooweee, Joe! Those look like some damned good tacos. Just FYI, I smoked some beef cheeks and used them for a twist on an Irish beef cheeks and celery root mash that was amazing. It's a rich and super flavorful cut of meat.

Those smoke beef cheeks are great, did the smoke for Labor day. I had to order my beef checks too, couldn't find them locally at a butcher stores. The cheeks have a wonderful favor that is not found in other cuts. Thanks for the great recipe for the hot sauce, been looking for this for a while.

We like it with a little spice but not fire breathing hot!!..lol. Also when you placed the cheeks on the onions did you cover with foil? And do you rest them at all in foil after smoking? Alright my dude, so I smoked some beef cheeks past weekend for the first time and they came out super tender like yours, however the oven dish part of the cook I followed caused me to dislike them personally. My friends loved it but family and I agreed it was way to greasy and salty. Funny that I did a 9:1 pepper and salt and that was it for salt. So assuming it's naturally a salty meat. But the point, is after watching your version I will once try again. I'd like to try the unsalted beef broth. I used wagyu tallow and butter. Wayyy too greasy. But yours looked great, good job!
Thanks David. It takes a little bit of Seasoning and your salt and pepper mix it good. Try adding a little bit of garlic too. Just when you think they're ready, give them another hour and they'll get nice and tender. 👍

I can never find packaged beef checks like that. I always have to pay for about 60 percent sinew and waste trimmed off to get to the cheek. I may need to ask different meat markets and see if they have any they are more trimmed up.
I was in a local Amish grocery/butcher store and they had what looked like a whole bottom round roast that loosely looked like a brisket. I was just curious if this or a top round roast could be used similarly as you would a brisket? Maybe you could experiment?
Hello Tim, the heat is less intense on the top shelf. Most smokers only have a bottom shelf so you don't have an option. I cook thanks like chicken, turkey and ribs in the bottom shelf that can take the higher temps. 👍

Absolutely you can. The only problem with roast is that they're very lean so the meat could come out too dry. 👍
