Small tamales are underrated. The bigger ones are often times doughy and dry. A small tamale made properly taste great when you reheat it on the comal and you get that crunchy and soft combo. And No need to overly season the masa If the filling is on point.
True, though big tamales if done right they have a good balance... but always season your masa, a masa without salt nor flavour takes off a lot from the experience.

I agree the way they are prepared the time, every year I help my mother, sisters and daughters make tamales 🫔 and I asked my momma why she says a prayer while poring boiling water into the carefully placed tamale pot, she said she learned from her mother and grandmother to always do this. I don’t know what she is saying because she says the prayer in Spanish. But 70 dozen and they are so delicious. I love my mother for teaching me and doing so much work with love that makes the food taste so delicious.

I didn't get a chance to learn how to make tamales from my mom, but later in life, I learned how to make them by my aunt. After a while, now they taste just like my Tia's. I like to make the chile de tomatillo with chicken. Great video, thanks for sharing.
I get tamales from the lady that sets up a small table on the sidewalk in front of Oxxo. There are generous in size and the masa is on point. 25 pesos. Mexico rules!

I remember, in America, the tamales served in restaurants were much better 20yrs ago. Because, they focused on the dough, and just put taco meat in them. Which seems kinda lame, but it was the flavor, and texture of the dough that made me fall in love with the dish. It's great that there's more flavorful filling nowadays, but, similarly to the video, it's when they get the dough right that they're best!
I'm not Mexican but my brother in law was I find great memories of me sitting at the dinning room table with ten of his family members listening to holiday music making tamales 🫔 for Christmas dinner each and every person in that room was very happy we had a great time together him , me and his family made over 75 dozen tamales 🫔 for family and friends want great memories

nobody makes them from scratch, if you buy maize you need to boil it and take it to a mill unless you use fresh corn which will taste quite different and that's what you seem to like better.
Two different things, masa is made of maize which is a type of corn with bigger grains, that maize can either be bought dried, then rehydrated, nixtamalized and milled or straight up using fresh maize. Corn on the other hand has smaller grains and has more taste, some use sweet yellow corn.
I love Mexican food but hate tamales for some odd reason. If they had more meat and fillings maybe but I don't like all that "breading" My Mexican friend had his mom living with his family. She started mixing Velveeta cheese with her homemade salsa. I started dipping the tamales in that. Was freaking awesome. Was my idea of course.
That's an easy way to know somebody doesn't know how to make tamales. Even if they are big they need to be balanced, with seasoned meat and masa. Tamales in banana leaf are quite bad, people like to eat them in the south but they usually have a less developed taste so they tend to like crappy things better.

Also, most of those tamales seemed normal-sized, at least, but the papahs! kept calling them small. What's up with that? At least in Texas, most tamales tend to be small- to medium-sized; you need at least half a dozen to fill up. That's why it sucks to make them--so much work! But soooooooo delicious!

It would be better if somebody from a coastal mexican town rates them, last time I watched them I could only facepalm on the horrendous ceviches, even the guy who bragged about doing ceviche in sinaloa and came up with one of the worst iterations. Good ceviche in sinaloa is found only in Mazatlán and is made with just sierra and carrots, or shrimp ceviche. If you want ceviches that blow your mind: Baja California ceviches, lots of them say "sinaloa style" but nope, that style is absent in sinaloa (do not count tijuana as it is not a coastal town per se).

I used to hate tamales but later tried Oaxacan tamales which use banana leaf instead of corn husk. I love those way better.
Skip the corn husk tamales. 95% of the time they're too dry and not enough filling. The banana leaf ones are good.
