Absolutely! What you'd want to do is split the range of light levels into intervals, then assign a pitch to each one - so you'd have for example a bunch of blocks that said "If light level is between X and Y, ring tone Z Hz".
Really like the content, however it’s technically not a theremin, as it uses light level, and not proximity. I built mine with an arduino mega (I know that’s a bit overkill) and an ultrasonic sensor, so it responds to how close something is, rather than how bright something is. However, great video, liked the project.
