  • This recipe will save you a ton of money on lunchmeat! I decided to give DIY deli meat a try, the deli counter prices are getting a bit too high for us. I could not believe how tasty my homemade lunchmeat was, we will be doing this all the time!

    My mom used used a large hand grinder that clamped to the counter. She ground bologna or cooked ham, added seasoning, mayo, mustard, sweet pickle relish to make a spread for sandwiches.

    I always taken a teaspoon of the mix and cook it in a dry skillet to taste for salt and seasoning before I cook it. I also add liquid smoke as well.

    I am all over this. Went straight to Amazon to get me one. Those would really cook up on a fry pan to make a warm an crispy goodness of a hot sandwich.

    So I made it today with 3lbs chicken thighs. My seasonings were a tsp each garlic powder, onion powder, smoked paprika, brown sugar & chicken bouillon powder. I used a tablespoon of nonfat dry milk as the binder. It taste just like and is the color of bbq chicken.

      when making turkey ham I use an egg white as a binder. That is another option.I am keto, so the powdered milk is out for me.

    i made some turkey ham as you can't buy it anymore,i used pants down aprons on site. It turned out great . the second time i added liquid smoke and now it tastes for sure like turkey ham. In the future i might try cold smoking it after I cook it in the thing you used. thanks for the recipe.

      Ooo that sounds so good! We bought a discounted after thanksgiving turkey and we are going to grind it up for lunch meat this weekend! Maybe we should add some olives?? Love it!

    We wrap our did deli meats in film and sous vide them at 140f for 2 - 4 hours on the weekend. Our app for the sous vide asks, what meat, what weight and how thickn at the thickest part of the roll, then give us a time. Normally I just set it and go to work, and leave it running for 8 hour's. During the work week. I would recommend looking at ways to insulate the container you put the water in, I drilled a hole in the lid of a good quality beach cooler to fit the heating elements , it reduced the amount of energy use compared to one of the clear tanks by just over 50% according to the kill a watt meter when i tested it. You can use the spring loaded deli cooker if put it in at Ziploc bag with the air squeezed out using water pressure, just allow a bit of extra time. Only ever coated the outside of my deli meat with paprika and black pepper after cooking, rolling the meat in the spices wrapping it tightly in film. Take a look at meat glue if you want to use whole meat rather than ground meat. The gyro meat works well if you fry/griĺ it to make some crispy or charred.

    If you use a serrated blade it will cut easier. Looks good! Going to try this!

    I've made this numerous times & if you put a lid on your pot of water when boiling it cuts down the cooking time by about half. My "meat tube" sticks up about an inch or so above the top of my pot leaving a gap so the water doesn't boil over. But it kinda traps some of the heat in the pot. If that makes sense? It's kinda hard to explain without a visual.
    Also, once the loaf of meat is cooked & cooled I've found it's easier to slice thin if you cut it in half lengthwise cause then it doesn't roll. I thought about a meat slicer as well but I always sharpen my knife real well before & with a little practice I have gotten pretty good.
    One more thing... this freezes very well. I make a big/double batch & package it in individual zipper bags & suck out as much air as I can from the bags because I don't have a vacuum sealer & I've found it tastes just as fresh when thawed from the freezer after being frozen for up to 3 months. I can't attest to any longer than that though.

    Assuming you could add Prague powder as a curing agent. Have made some fantastic pressed ham and want to try chicken, turkey, and beef products.
    Have a Mexican market close by that sells seasoned chicken picado that looks like it would make a fajita seasoned. Chicken product.....got to try it.

    Hopefully, you kept making these lunch meat videos, because it is really something that I am interested in. It is just TOO EXPENSIVE to buy store-bought deli meat anymore. And, it's not as safe as it used to be. Around us, all of the Boar's Head deli meat was recalled, because someone had died after getting a bad case of listeria. And, also, I ate at McDonald's on 10-22-2024 (Tues about 3pm) for lunch and had a QPC with extra, extra onions. Well, I got some type of food poisoning or E.Coli after that meal, and I am still not 100% back yet ... and it's like 11-07-2024. Still getting postprandial pain (as Doctors call it) in my intestines, first was in my stomach, then moved down south, so I'm less trusting of external meat sources. So, I'm gonna make stuff at home.

    I have run across your channel today and I subscribed. I am not sure why your channel came up in my algorithm hut I am glad it did. I have watched 4 videos so far. I loved the idea of this one and I'm glad I watched it because I laughed so hard when you said "that felt gross" when you were preparing meat bit and the spring bit and the thermometer bit. 😅😅 Your husband is also so funny for calling each part a "bit". We bought a smoker 2 years ago used once lol we just don’t know what we are doing, and of how he smoked your chicken I noticed water in bottom? Of the smoker ours is a pellet smoker .

      Yes! The meat held together perfectly. I haven’t tried bologna, we’ve stuck to chicken and turkey but it would be so fun to experiment!!

      My husband did it, he said 225 ish for 1-2 hours. It’s delicious!

      Yep....homemade smoked deli meat is fantastic. As long as I have ham presses and and a smoke source, i wont be buying any deli meat!.
      I've done pressed hams and used a cold smoke process using a pellet tube that generates some strong smoke but very little heat.....1 to 2 hrs is enough if you have a good smoke source.
      I just ripped the mechanicals out of a non functioning pellet smoker to make a smoke box that I can put smoke tube in and meat/sausage for cold smoke......works well.

    my other brother. got a smaller slicer many many many years ago and they got theirs at fingerhut. yes its a bit pricier but monthly price was like $3/month. and money was super tight at that time

      We have a smoker that hooks up to a propane tank. It’s simple and small but does the trick! It’s not exactly my expertise however, my husband is the smoker in the house!

    Can put it in a souv bag so that it Iwill come out easy, thermometer should come into play when you think you're close to the end of your cook.

      Are you asking what the point of lunch meat is? It’s the shape, it’s the texture, it’s the ability to add flavors and fat without losing it in a pan? Like I looove a chicken sandwich that’s just a sliced breast but cold cuts and lunch meat just hit different! Like if you ground it up and cooked it, it would be a burger. The method changes the flavor and texture for sure!

      This is a hugely misogynistic take but I’ll be honest. My husband and I have been happily together for 12 years and I believe a huge key to our success is a balance of power. When it comes to this channel, it’s all mine. He’s not into it but will support me because he loves me and my endeavors are important to him. When it comes to the kitchen, I’m the boss and I cook 99% of everyone’s food. This is a role that is respected in my home, not demeaned. We use our personal strengths and interests to each bring leadership roles to our relationship. And I also hate to point out the obvious, but this is a TH-cam video.
