PTFE tape is still used, but what you see here are compression fittings where an olive (the small ring around the pipe) is squeezed between the pipe and the fitting. The olive does the sealing, the paste is to make the nut and olive move smoother and more evenly resulting in an even better seal. There's 'liquid ptfe' if you want to make a water tight connection using just threads. The machine is a novopress, brand of the fittings is probably Pegasus judging by the green ring and the unmarked copper.
