In case you wondered / cared, Scovilles are the unit for measuring chili hotness. If you get 1 drop of purified oil from a particular pepper strain, and mix it with 100 drops of plain veg oil, and you can still taste the pepper, then that's 100 Scoville Heat Units. If you can taste 1 drop of chili oil diluted in 10,000 drops of plain veg oil, then that chili is 10,000 Scovilles. The chili pepper record holder is the Carolina Reaper with 2.2 million. It's usually used to measure the hotness of breeds of chilis but there's no reason you can't measure a particular sauce recipe with it if you liked. So the more plain oil needed to dilute away the heat, the hotter that chili therefore is. The Ghost Pepper at the end is 11,300 so add 1tsp (5ml) of that sauce to 55 litres of plain oil, you'd still be able to taste the heat.

Tip: Rub table-salt on the tongue to neutralize burn sensation and restore feeling. Just a few grains on the source of the burn.
