We are a family of 3, my husband, my mother in law & myself. My mother in law has a big appetite so it as actually feeding 4 people. We are living on social security. I prepare oatmeal for breakfast 5 days a week, 6th day eggs with toast, 7th day pancakes, syrup, & sausage. For lunches I prepare egg salad sandwiches or tuna fish sandwiches or PB & J sandwiches or ham sandwiches. Fruit is served with lunch. For suppers I now use only an half pound of ground beef for chili, spaghetti. I get 3 meals out of 1 whole chicken. Roast chicken, then chicken casserole then chicken soup.

I really wish I knew all these tips when my kids were young, and I quit my job to stay home with them fullt-time. I did have WIC for my 2nd child, and I frequently shopped at a bent & dent store which saved me a TON of money! But, I still could have been more frugal. Now I'm alone (husband passed away & kids are grown) so I have to give myself a pep talk to cook for myself - I've been watching your videos to get motivation and ideas. Growing up as one of five kids with both parents working full time at low-income jobs, I know what it's like to be frugal. We also had food stamps, and my Mom could stretch a dollar better than anyone else I've ever known. It was all generic brands, homemade bread, canned veggies, whole chickens instead of boneless, generic Koolaid and homebrewer sweet tea instead of cola. We had beans and cornbread a lot. Lots of stews and casseroles. Only time we had fresh fish was when my dad went fishing cus store bought fish is too pricey. We also had PBandJs or baloney sandwiches because that was cheaper than other deli meats. We never went out to eat, except on the long drive to visit relatives once or twice a year. And then it was Sonic or Pizza Hut. That was back when Sonic still had the brown bag special and lower prices. A big family in the same situation now wouldn't be able to afford to eat there. Those were the good ole days. And I still love me some slow-cooked pinto beans with salted pork and homemade cornbread. You don't always need expensive stuff or fine dining to be content and appreciative.

One of my go-to meals on a budget, taco soup. A can of black beans or kidney beans or a couple cups of cooked beans if you have leftover from previous meal, can of whole kernel corn, can of diced tomatoes and green Chiles or about a cup and a half of salsa or something similar, diced up onion, diced up bell pepper or hot peppers if you want more heat, a packet of taco seasoning or the equivalent of spices from your cupboard(cumin, chili powder, garlic powder, onion powder, whatever else sounds good), a pack of ranch dressing mix, and a couple lbs of chicken or some other meat. Sautee the meat, onions, and peppers, add seasonings, add rest of ingredients and some water to thin it out a bit, let it simmer till flavors blend. You could also just throw it all in a crock pot on low for 6-8 hrs. It's good by itself or on tortilla chips with a little cheese and sour cream. You could mix it with cooked rice or noodles and cheese and make casserole. Or drain some of the juice and make burritos or tacos with it. Or mix it with scrambled eggs for a breakfast thing. It's pretty versatile and the ingredients are affordable. And it makes a lot.

Now, I am trying to learn to cook for one, since my husband passed away, very suddenly last October. I’ll tell you that gallon of milk can cost $65..! LOL Since, I can’t (haven’t learned how to) go into the market JUST for milk..! What a wasted trip that would be..! LOL I’m going to keep trying..! I might have to start a chapter of ‘Food Shoppers Anonymous’..! LOL Great ideas in this video..!

I was just discussing with my 17 year old how I haven’t seen gas prices like this since he was a toddler, my husband was in the military back then and we would have to decide pay $6 a gallon for milk or drive 30mins into town for milk. I think something a lot of kids miss out on now is that Saturday morning grocery shopping with mom, watching the ads and stocking up on sales. It’s a huge way of how I learned to shop and how I still shop today.

Ginger, see of you qualify for food stamps or your local food banks. We got wic when my youngest was a baby and it helped us until our income was enough to support us.
Also a lot of people have fruit trees but never harvest them. Offer to harvest your neighbor's trees in exchange for part of the fruit. Put the word out with friends and family that you'd be happy to take any extra garden harvest, or foods that they want rid of. I'm sure I'm forgetting plenty, but I wish you the best during this difficult time. Gas in my area is $6 a gallon, so I'm definitely feeling the pinch too.

Spent $110 yesterday (I’m in Canada) but I got so many staples. The haul should last me through the month which is insane to me (feeding myself and my partner). Appreciate your hauls because you’ve helped me rationalize buying spices, flour, big bags of rice, oils - things that will LAST - instead of just cooking bland and “dealing” or buying the smaller unit for better cost at that time. I even got a lot of protein. 2 packs of frozen burger Pattie’s, frozen shrimp, two whole chickens… Pattie’s will make pasta sauces/burgers/etc, and will make soup with one of the chicken’s! Always love the tips ^-^

Great video. You can actually make pancakes without eggs or milk. Here's a recipe. 1 1/4 cup All Purpose Flour 1 1/4 cup whole wheat flour 4 Tbsp sugar 4 Tbsp baking powder 1tsp salt. I keep a batch of this mix in a Mason jar and just pour out what I need. Add water until you get the consistancy that you like. If you don't have wheat flour you can always use white or visa versa. We like to add chocolate chips, bananas, etc. to make them fancy.

It’s such a money saver when you can cook all or most of your meals from scratch. It baffles me when someone I know complains about not having money, but they (2 adults and 4 kids) eat out every night for dinner and most days for lunch. My husband and I started intermittent fasting about 1 month ago, and narrowing down our meals to just lunch and dinner with an occasional OMAD is even more of a bonus for saving on food costs.

Please read the entire comment before judging me. I’m going to give you what t use to think, and why, then I’m going to tell you how I feel now and why.
When I was a young single mother (17) I was completely on my own I had graduated already, worked full time, and had my own place. Raised in foster care from 18 mts old so I had zero family to help me. I made it my utmost importance to never get any help with feeding my or caring for my son. I alway had him dressed perfectly, he always had the best food, the best of everything. While I literally had nothing. I paid rent, bought everything for him, and I actually had mayb enough money left for me to eat ramen noodles once a day and sometimes I was able to get a couple apples a week. I looked down on everyone who didn’t “sacrifice” fro their baby. I ended up so sick I collapsed at work and ended up in the hospital. Now my babysitter was amazing and kept my son while I was there for no charge, at first I had a serious issue with that. I felt I always had to be perfect for him so the state didn’t take him from me. Well, after almost two weeks in the hospital for malnutrition I was related and went home, only to be in the same place in life. The last foster mother I had was contacted by my babysitter to help her intervene. They sat me down and really gave me a dose of reality. They left me realizing I wasn’t do everything my baby needed. My baby needed me! Not the best of everything. I swallowed my pride and got help for his food, and basic wic
Now, when I see a young mother and she has wic I actually smile, I remember how I struggled, how I needed to grow, don’t pay attention to the people like the old me, those who don’t realize what is best for your babies. Pay attention to the people who are like me now that have set aside their stupidity to be able to see what is best for your babies. And if you weren’t told today, YOU ARE ENOUGH! You are what your babies need. Much love and respect

Fortunately I like leftovers so I freeze what is leftover from dinners, so I generally only need to make about 3 meals and then I can eat those and fill in with things like oatmeal and eggs. But I have to buy the smaller amounts of many things. For example, I can only buy quarts of milk, which when added up generally cost more. I think everyone has different challenges and can learn at least one thing from most videos.

You Can freeze milk. Try buying a half gallon and freezing the extra for the following week. I believe it is good for about 10 days in the freezer. Or like some other people suggested, use the exra to cool with and freeze that.

You can actually keep milk for upto a year in the freezer. But it is also suggested to eat within 6 months.

I was really just using milk as an example of how smaller amounts generally cost more per unit.

This is a great video. Eating healthy can be difficult right now for some and I always say see what produce is on sale and work from there. Eggs and frozen spinach with bananas on the side is always my healthy go to cheaper breakfast

In Alaska with WIC you get milk, eggs, beans, yogurt, juice, fruit/veggies, whole grains (bread pasta or brown rice), peanut butter, cheese and cereal as well as in the summer farmers market checks and if your breastfeeding you get canned fish and other things or you can choose to get formula before Covid hit they also did cooking classes in office to show what veggies where in season and how to use them they now have an app and use a card to see what benefits you have each month and allow you to scan items to see if they qualify or not and have links to a website with recipes it’s so much nicer then having to use the checks and carry the booklet around with you everywhere

WIC is SO helpful! It covers around $75 worth of stuff at my local store (when I get everything I’m able to benefit wise) and it’s almost all stuff I would normally buy so it seriously helps! Foster children in our state automatically get WIC so if you’re a foster parent check and see if your state has the same rule! 🥰 helps us make sure our kiddos are getting all their daily dietary needs while not breaking the budget!
