If you have been wondering how much candy you should buy for your freeze-dried business, this video can help you. I freeze-dried four different candies and weighed them before and after to know how much net product we get from freeze-drying candy.     Just wanted to thank you for putting out these videos and sharing so much knowledge and wisdom for free. You’re saving people like myself a lot of TIME and Money!! Although I’m sure I’ll make some mistakes of my own, it’s so helpful to learn from your learning curve. Owning a freeze dryer was a DREAM of mine ever since I was in the military. We saved up & finally bought a Small Harvest Right! I bought it for survival food purposes, but we also have a family of Sweet Teeth. Lol.

    How did you keep the skittles from sticking together? Whenever I bunch the up like that they stick together. I have to space and line them up

      You shouldn’t need to line up skittles but I also don’t normally bunch up skittles like that either. Set temp at 135-140 and run for 3 hours and then let them cool to below 90 degrees after the cycle ends

    What heat temp works best with candy ? How long of pre heat before vacuum? Does the heat stay on for the entire vacuum time? Why would a candy bag need to be sealed? Thanks.

      Great questions! A lot of this I cover in a number of other videos but 140 degrees is the best temp I would recommend for most candies. Pre-heating or warming is only necessary for candies that have a hard shell (Lemonheads or even Starbursts).     Sour patch kids is the candy I am having a problem with. It doesn’t change the original consistency but I see them on sale with other candy companies so know it can be done. If you have already explained this I have missed it since I just subscribed. Thank you in advance.

      I haven't done Sour Patch kids. Some candies are worth doing on consistent basis and other are too much trouble to get just right so I avoid them, Sour Patch Kids is one of those I've tried and avoid now.

      Sour patch kids! I’m working on those. I’ve been working to get them to work for 3 yrs now. I’ve had some luck only when you do 5, 20 minute heat consecutively and then run vacuum for min 2 hr. I’ll update once I have definite success.

    any tips on freeze drying skittles i freeze dry the skittles and on the edges they stick together and dont blow up as much as the others i do not put in as many skittles as you did in your test and they still dont as big as the ones you did

      I definitely never do as much on a tray as I did in this video, I normally do about one pound or so. I’ve found there’s always going to be some inconsistency with the machine so sometimes it will pop all the skittles and other times you’ll have some that don’t. 140 degrees is my default temp for skittles and run for 2-3 hours, then let the machine cool to under under 100 degrees before pulling them out.

    Great job on this video! Having trouble with Warheads! Can you tell me what settings you use to get them to expand? 135 and do you heat the trays?

      I’ve never done warheads. I’d try 140 for three hours and see how they do. I don’t think warming trays is necessary but since I’ve never done warheads I can’t say for sure

    Hello, do you know why when the freeze-drying process of my candies is finished, in the machine they are inflated and when I open the valve and take them out of the machine they deflate, they become not very pretty. Do you know why ? THANKS

      Great question! They are deflating because you are taking them out when they are warm and they haven’t settled. Let them cool down until under 100 degrees in the FD. Also, watch my last video towards the beginning I explain what happened to candy when you freeze dry it and why it deflates.

      No it won't get wet, if you are not present when it gets to 100 degrees you can always warm the trays back up. I like my candy cold when I store them before bagging.

      A small amount of ice is pretty common, I don’t defrost on candy runs

    Hello, in fact I had asked you the question why my candies deflated when I took them out of the freeze dryer but I realized that in fact they deflated when I opened the valve to take the air out of the machine. Do you know why?

      You need to let the candies settle after they are done so wait for the freeze dryer to get below 100 degrees or so before releasing the drain value pressure. That should do it!

      The pump should stop if it's done with the cycle, if it's still running you may need to contact Harvest Right.

      Peach Rings have been inconsistent for me as well. I've seen people have more success by cutting them into pieces prior to FDing. Of course they won't be "rings" anymore but they do come out crunchy more consistently.

    I just got my machine and I tried skittles, sprees and mini starburst. First time I did skip the warming and within 2 hours at 145F I thought would work only a few skittles popped open so I added more time and then did warming trays and another two hours a few more have popped open. I am now on my third 2 hrs going and have seen so many different videos I’m at a loss. My mini starburst just swelled half the size still soft chew in the middle and my sprees haven’t done anything. Do you have a list of times for all candies and temps perhaps?

      Try warming the trays for 20 minutes at 150 degrees and then run them for 5-6 hours.

    Hi on your Kraft food bags how long can you store your candy in there and it stays fresh if it stays sealed and do you put any absorbents in it?

    Im really wanting a large freeze dryer, but im weary of the 6000$ purchase im not rich lol, my wife seems 2 feel she would be able to make a business out of it (selling candy) i dont see that part of it to be honest, i just cant see it selling well, maybe im just 2 cautious, ide like it for just food storage i dunno what do u think?

      Depending on how aggressive you get with farmers markets and holiday bazaars later this year, you could break even on the cost easily within 6-12 months. You should expect total startup costs to be in the $5k-$6k range with in large FD because you need to get product, bags, storage, labels, license, insurance, equipment to cut everything, extra trays etc. It’s a fun side hustle that can bring in some decent money but it’s more work than you might think. Great margins but still laborious.

    Not sure how you said they didn’t lose weight. Of course they did. Albeit a small amount. Your scale proved it. You can’t say a good didn’t lose weight if it actually did, even if it was minute.

      At 20:40 you actually DID say they didn’t lose any weight. Also, there is always water that is frozen in the chamber after doing candy.

      It’s not saturated…yet. But the freeze dried candy side is definitely getting more popular and therefore more people are doing it as a side income or full time. I anticipate next year will be a tipping point for everyone doing candy and some will be selling their machines, others will consolidate, others will diversify. Everyone who is doing it without understanding how to run a sustainable business will eventually either quit or try to sell their machines to someone like me or you. Stay strong out there and you will come out on top!

    Oh dear. So many no’s here! I never tell my secrets but I am so annoyed listening to 3 hours of electricity use for this. Listen heat the trays!!! JR: 6-8 mins at 150 then run it for 40 mins or until you see it blow up. Cancel run,Let machine cool to 67-71° release pressure open and package immediately. DO NOT USE UNNECESSARY ELECTRICITY! No one has money for that! I’ve been freeze drying for 7 yrs. There are a lot of tricks. Enjoy and take good care.

      Just haven't seen the need outside of less to clean-up and less stickiness. I do at times but usually don't.

    Suggestion that you do not go by what the printed weight is but instead use a scale and go more accurately to the nearest gram or even better to go to the nearest 10th of a gram.

    What machine do you recommend as a starting machine?

      Here are several freeze-dryers I use in my business and I would recommend considering them for your existing freeze-dried business or just starting out.
      - Harvest Right Freeze Dryers - affiliates.harvestright.com/1974.html. I like the Harvest Right Large to start out and then you can advance to the XL if you have enough business coming in.
      - StayFresh Freeze Dry - stayfreshfreezedry.com/?sca_ref=3292008.4uBi4MIG3W&sca_source=TH-cam. I've liked the freezing speed and dry times of this machine. It's a little larger than the Harvest Right Medium but you can do 12-13 pounds of food in it which is only a few pounds less than the Harvest Right Large capacity. Even though Harvest Right says up to 23 pounds that's not possible in my experience, especially with fruit.
      Blue Alpine Freeze Dryers could be another alternative to purchase for your business, I do not own one of these freeze dryer currently so I don't have any direct experience with the machine:
