Hi Steve, you want your skillet to get really hot. Medium-high heat and let the skillet heat over the heat for 8 to 10 minutes. Get ready for some smoke (this is normal during the blackening process). Hope this helps and we hope you make the fish. It's one of our absolute favorites! Keep us posted!
