Sooo glad you did this. I asked home extension years ago about this and they said no. If you follow the canning directions it should work. Maybe a bit tougher texture but you get that with canning anyway. Thank you.
When you try it can you let us know if it taste different please? I'm worried that pressure canning it for the 2nd time (first time at factory) would make it taste different or maybe a different texture (soft or mushy). I done the fruits and they did turn out softer but still taste good. I'm anxious to know lol... Thanks friend.
I think for us, I would be more inclined to use frozen corn. Canned corn has already been processed (pressure canned) and it just seems like pressure canning it again would produce some pretty mushy corn. Would love to hear some feedback on this.
Yes you can, 1/2 pints and pints are pressure canned for 45 minutes. There is no approved time for quarts. I would never need that many mushrooms at once but if you want to do quarts I would just add about 10 minutes.

I have made veg soup with can vegs from the store ,and can ed it..vegs were not mushy...still just as good

Why are you pressure canning for 55 minutes when it’s already cooked? 25 minutes would be enough to seal
