Them saying they're the only ones that focuses on customer experience is not true. Third wave coffee is the wave that focuses on the quality of the cup AND customer experience. Other great examples of third wave cafés are Cat and Cloud and Blue Bottle, as mentioned in the video.

Can anyone explain why Philz coffee contains less acid than espresso? The conventional wisdom says it's the opposite. The longer the brew, the more acid. So despite the intense and strong taste of the espresso, is supposedly better digestible than filter coffee. Is Philz different? 0:53
