    People of the Basotho culture have many famous dishes, in this video we show how they used to cook Maqebekwane (dumplings), Setjhu sa nama ya kgomo (beef stew), Moroho (spinach), Mokopu (pumpkin), and Motoho which is known as soft porridge. There is also a little history on how the Basotho people used to cook their food during the times when there were no electric stoves, baking ovens and other modern cooking devices.
    The first food that make up our dish, the bread (maqebekwane) is the main part because it is where all the carbohydrates come from, then there is spinach, pumpkin, potatoes and green pepper as vegetables. The beef stew balances out by providing fats and oils while the pumpkin adds a little bit of glucose. The soft porridge acts as a good beverage if one successfully makes it super soft. The Sothos drink it early in the cold winter mornings while it is hot.
    THE RECIPE:
    Maqebekwane (Dumplings)
    - Two cups of brown bread wheat flower
    - 1/2 cup of sugar (add as much as you want haha)
    - Spoon of yeast
    - 500ml of water
    - Teaspoon of table salt
    Mix all your powders first before adding water in your bowl. Seal your bowl and pour boiled water in a bucket. Put the airtight bowl on top of the bucket so that the water vapor rises to the bowl. Leave them until the cap of the bowl is kicked up by the pressure as the dough ferments. Then take it out inside a tin can that can fit inside your pot. Boil water in the pot and place the tin inside, use something to seal the tin to prevent water from entering and close the pot. As the water boils the dough inside the tin can will be slowly baked. You wont get the same manqebekwane if you use an oven!
    Beef Stew (Setjhu sa nama ya kgomo)
    - Beef stew chunks
    - Carrots
    - Potatoes
    - Onions
    - 125ml of water
    - Spices
    - Soup Powder
    - Green Pepper
    - Curry
    Add water to the beef chunk in a pot. Let it boil until the beef softens. Add vegetables then spices and curry. Mix soup powder with lukewarm water and add into the stew. Let it cook until the vegetables are well cookes and the meat is well done.
    Moroho (spinach)
    - Spinach
    - Onions
    - A spoon of curry
    - A spoon of sunflower oil
    - A cup of water
    Put the spinach and onion inside a pot after finely chopping them. Add a cup of water and a soon of oil into the pot. Add curry and salt. You can add milk if you want to. Keep stirring and cook for 30 minutes.
    Pumpkin (mokopu)
    - Chopped pumpkin
    - 1/5 cup of sugar
    - 2 spoons of sunflower oil
    - 30ml of water
    - Cinnamon
    Add them all in a pot except for cinnamon, add it later and never stop stirring for 20 minutes.
    Motoho (soft porridge)
    You need to make tomoso first.
    - Cup of brown sorghum
    - 3 cups of warm water
    - half a cup of vineger
    Mix them all in a container and seal it. Leave if to 24 hours in the dark for fermentation.
    For Motoho
    - One cup of tomoso
    - Two cups of boiling water
    - Sugar
    Ad a cup of well stirred tomoso while the water boils on a saucepan. Let it boil and keep stirring for 15 minutes. When is is thicker, let it cool down before devouring and add your desired amount of sugar.
